    I bought joints this year so I had no turkey left.
    Taking responsibility one penny at a time!
  • We had quorn roast, I cooked 2 for 5 people xmas day, and 4 people boxing day. Sliced it all up, ate 1 for lunch (dad loves it!) and other one did buffet lunch for 4 and tea for 2.
  • oh curry does sound good, alas OH eat the rest of turkey last night, but might try this in the new year.

    I didn't actually cook my turkey til late last night, ready to have cold this afternoon. I sliced and chunked it all this morning - some to freeze in slices for 'roasts', some for pies and white sauce with bacon or sausage and some for sarnies over the next few days. I've just done my boys coronation 'chicken' sandwiches.

    Hardly any went this afternoon so we've got lots and lots left. (It was a 6.5 kg one which DH gets every year as a Christmas gift from work).

    We had it cold with salad, new pots & pickles yesterday & in rolls today.
    Still LOADS left.

    We cut the legs and wings off our turkey before cooking it, so will probably do a curry, and make some stock with those.

    Any leftover meat was eaten in rolls the next day, with all the leftover sausagemeat stuffing. My dog has had the rest, and I have just made a soup with the carcass, and some leftover veg.

    Cut up the turkey and ham, put it in a pie dish with the leftover roast potatoes and veg, added extra potatoes and veg. Will add some stock later and cover with pastry and bake later, bit like the Jamie Oliver recipe only with all the leftovers

    So far:
    Lots of turkey sandwiches
    Pizza topping for hm pizza last night
    Sliced and frozen enough for 2 for a quick curry in the new year
    Remenants in the slow cooker with stock and veg to make a soup

    I love leftovers!

    put half in the freezer and had turkey sandwiches and turkey risotto with the rest!

    the frozen half will come out in the new year for stir fry or curry or a coronation style turkey! mmm!
