bacon and veg to use up

I have got 2 packs of bacon in fridge (8 rashers) and a load of veg that needs using up,potatoes onion, carrot,peppers,white cabbage, broccoli and cauli. tinned tomatoes i have an idea in my head that I could do some sort of bacon and potatoe bake but googling for a recipe hasn't given me any ideas.

I would ideally like everything to be in one pot, cos I have spent the morning tidying the kitchem on the FLC and am not prepared to mess it up:D . Also DS and DD are out till turned 5 and will get a snack tea from their after-school club/nursery so may not be hungry. this way I can just dish up if they want something.

Don't know how to make some sort of sauce I have flour (SR & Plain), plenty of milk, most herbs and spices and I also have a Homepride chasseur sauce in a tin (soz:o , but it was cheap:p ). This says contains tomatoes,onion, white wine ,mushrooms. It suggests with chicken would it taste right with bacon:confused:

    If your bacon is sealed, you can freeze it - reduces the glut!

    How many spuds do you have? I make a Keith Floyd bacon & potato dish which is scrummy - put 3 or 4 rashers of bacon on one side for top of dish. chop up onion & bacon & fry until crisp. slice potatoes & layer in bottom of shallow greased dish. sprinkle on some of bacon & onion, add crushed garlic if liked. add pepper & bay leaf to each layer. repeat until dish is full. pour on bacon fat from pan, place rashers on top, add enough boiling water to just cover potato slices, and bake in Gas 4 for 1.5 hours until bacon is crisp & potatoes tender. serve with broccolli & cauli (trees & clouds as my kids called them years ago!)

    Then, why not make a soup with the following:

    1 potato, 1 onion, carrot, white cabbage

    and make a slightly spicy veggie sauce with the other veg, to go in freezer as an instant sauce to have with pasta/spaghetti

    Plenty of spuds counted roughly 12 large ones. Bacon is sealed with a use by date in July, just wanted to use up my fridge stuff 1st rather than getting something out of freezer to defrost (don't want to dirty the newly cleaned microwave:D ). Do you need to parboil the spuds first :confused:

    This a recipe taken from "The Paupers Cookbook"

    Onion, Bacon and Potato Hotpot

    4 onions
    4 large potatoes
    1/2 lb bacon rashers
    1 pint milk
    2 oz flour
    2 oz butter

    Make white sauce with the flour, milk and butter.

    Peel and slice onions and potatoes, slicing the onions extra thin. Remove the rind from the bacon and cut into small strips. Grease a casserole with a lid. Fill the casserole with alternating layers of potato, onion and bacon, ending with a layer of potato. Pour the white sauce over it and give it a gentle shake to distribute the sauce throughout.

    Cook on Gas Mark 6 or 200 degrees for an hour. Take the lid off, turn oven down to Gas Mark 4 or 180 degrees. You can sprinkle some cheese over it towards the end.

    I'll be honest and admit I haven't made this myself yet. If and when I do make it I'll use fewer onions.

    While you've got the oven on hot, you could roast some onion and peppers to make a soup with the tinned tomatoes and herbs :D

    Something I used to make (before Little Filigree refused to eat mash) was Cheesy Pie. I would boil some potatoes, and steam a selection of veggies over the potato pan. Put the lightly cooked veg into a casserole dish, add white sauce and some cheese. Mash the potatoes and spread on top, sprinkle more cheese over the top. Put it in a medium oven till the top is crispy. That would use up onion, potato, milk, cauliflower, broccoli and carrot. Then you could use the bacon, tomatoes, pepper, onion and a pinch of chilli to make a spicy pasta sauce and call it Pasta Arabbiatta.

    I don't eat cabbage, you're on your own there ;)

    I've made this before - it's delish(SP?) :drool:

    You can also just layer up the potato, bacon, onion and butter (you do need quite a lot of butter!). This is also very nice (although not great for the hips!!)

    So have I and it's wonderful! I recommend The Pauper's Cookbook, the original version is out of print now, but if you can get hold of a second hand copy it's well worth it. :T

    Thanks newleaf, I'll look out for it. I have just bought the 'more with less' book somebody recommended on here. I can't wait for it to arrive. I'm always on the look out for ways to use things up!

    I have a recipe very similar to Filigree's from the Good Housekeeping cook Book . It is one of our favourites, provided that the sliced potato cooks, I always have trouble with sliced potato cooking unless I v slice it.

    I've got this book too! A friend gave it to Mum in 1982 and she gave it to me when we moved over here....OH did his own version of the above and it was very nice.

    The Paupers Cookbook, is this one the by Jocasta Innes? If so Amazon have it at £3.13 for a second hand copy.
