    Ingredients
    • 230g Jus-Rol fresh large shortcrust pastry case
    • 1 pack (about 50g) ready-cooked crispy smoked bacon or use raw and fry in a little oil.

    Method
Pre-heat the oven to gas mark 6, 200ºC. First, pop a baking sheet into the centre of the oven while it’s pre-heating. Meanwhile, beat the eggs with the cream in a jug and season. Next, crumble the crispy bacon over the base of the pastry case and sprinkle over the Cheddar.

Using oven gloves, remove the baking sheet from the oven and place the pastry case, still in its foil container, on it.
Pour in the egg-and-cream mixture and sprinkle the grated Parmesan over the surface.

Now return the baking sheet to the centre of the oven, reduce the heat to gas mark 4, 180ºC and bake the
quiche for 35-40 minutes till golden and firm in the centre.

Leave to rest for 10 minutes before serving, perhaps with a classic tomato salad.

It's a Delia Smith recipe. I vary it by adding sliced mushrooms and chopped onions, browned.

Loads of recipes on-line. Just type 'quiche recipes' into Google. I love quiche, especially this time of year with salad.

    Good luck

You might want to sub the cream with cream cheese - still rich, will set better w/o being rubbery and defnitely more MSE.

As much or as little as you like - start with a 200g tub instead of 225ml cream - it cost all of 59p last time I saw it in Aldi - beat it to soften first and then whisk it in thoroughly with the eggs.

Oh yes one final tip - if you are using tomatoes, de-seed them first.

Sliced courgettes and diced aubergines (both lightly fried in a minimum of oil) are also good - save some of the cream cheese to spread across the blind-baked pastry, spread your veggies (and bacon if you are using it) on top, pour in the egg / cheese batter and top with tomato slices.
