I have loads of eggs, cheese and sandwich ham lurking in the fridge, i would like to make quiche but:
can i make and freeze for packed lunches??

make pastry shell in an oven prrof dish. grate cheese into shell, add beaten eggs and any bacon/ham etc, bake in oven0

I use 50g butter to 100g flour (but I make thin pastry) I don't blind bake just line flan dish/pie dish with pastry, fill with filling (fry onions, pepper and bacon or whatever you want to use) then add egg and milk mix (3-4 eggs and splash of milk, seasoned) and top with grated cheese bake until risen and golden.June Grocery Challenge £493.33/£500 July £/£500

I made quiche for the first time last month using this recipe, and it turned out really well. (Too well, tbh - I couldn't stop eating it!
)
You can replace the bacon with the ham you have already, and I understand you can use milk instead of cream, although I've yet to try it myself. You could make your own pastry instead of using bought stuff if you're so inclined, but I'm not the best person to ask about that as my pastry is generally a disaster zone!
Quiche freezes well - just cut it into slices and freeze; if you take them out of the freezer in the morning they should be defrosted and ready to eat by lunchtime.

I made one tonight, 8oz plain flour, 4 oz marg, pinch salt. Rub together till it looks like fine breadcrumbs mix in enough cold water to make a dough. (you are supposed to leave it to rest, but i never have time
)
roll out on a floured surface and put in a greased quiche dish (or use a casserole dish lid, pie dish possibly a sponge tin) trim the excess
Put on baking beans (but i've never had these i just !!!!! all over with a fork), brush with milk (or egg if you;re posh) and bake in a hot oven (200 c, gas 6) for about 15 mins till brown.
Meantime beat 6? eggs with a little milk. Add some grated cheese and whatever else you have - ham (i used 2 slices) onion, bacon, broccoli) pour in case and return to oven till set - time will depend on depth this one was half an hour.
I used the left over pastry to make some mini cheese and onion pasties - cut discs (i used the top of a cafetiere :rotfl:cos it was the right size) add grated cheese and chopped onion. fold over and pinch the edge together (after brushing with milk) and glaze with milk. Put in the same oven for 15 - 20 mins till brown.
ETA you should fry onion, bacon, mushrooms and cook things like broccoli before adding.I wanna be in the room where it happens0 -

If you're not ready to make pastry yet, you can always line your dish with mashed potato and then put the egg/milk/cheese/ham/onion mixture on top. It's really nice but perhaps not as portable as pastry.0
