So I empty the middle of peppers but keep the tops...
brown the mince, add chilli powder, pepper and salt and cook the cous cous at the same time then stir through the mince with maybe some tomatoes and other veg...
Put mix into peppers and bung into oven till cooked (with tops on)...I usually serve with some homemade tomato sauce using the mince liquid as stock because cous cous can be dry...0 -

Thanks for that, it sounds like the sort of meal he would enjoy, and I can prepare it in advance to an extent, so I look all organised and capable.
