Not sure if anyone will still be looking at this but thought I would try anyway!
Just wondering if anyone could tell me how much this recipe makes? As I haven't tried it before would like to make it but don't want to make the entire quantity if theres loads of it!

I made a slightly different version the other day and just had a cup which was utterly fabulous.
At a guess that recipe will make about 300ml (give or take depending how much you reduce the syrup) I quadrupled the quantity on the other recipe I used to make 1.25 litres and will be making more this week for gifts.
The recipe I used was a tweak somewhere between the one in the OP and Billy's Favorite Gingerbread Spiced Coffee Syrup (sorry, I can't post link so you'll have to google it)
I used more vanilla, more fresh ginger and left out the peppercorns. I used a mixture of white granulated, soft light brown and soft dark brown sugar (I'd have used molasses if I had any in the house)
I also steeped the spices in the water brought to a simmer for about 30 mins and left to cool another 30 mins before straining THEN I added the sugar - easier to strain water than a syrup

That sounds like it would be okay if I did that much - depending on how much you are supposed to use. How much would you say to add to a cup of coffee? Teaspoon or less?! - Obviously you can probably tell that I'm not a coffee drinker!

That time of year again. Was most disappointed in town yesterday Marks and Spencer cafe ran out of their gingerbread syrup
I must say amaretti was an adequate replacement though
