It works fine if you use snake oil.

Several of these companies have been prosecuted by trading standards. The companies were unable to prove their products actually worked.

If this really worked, why wouldn't all car manufacturers install these as standard?
I think if you did install this to your car you would notice an increase in MPG, but, that would only be because you are aware of how you are drivingand trying to get better mpg.This is my signature. There are many like it, but this one is mine.0 -
Years ago when I was skint I saved up and installed a (I think) a 'Redex manifold vacuum gauge' to my battered old Ford Prefect. As money was tight I soon learnt to control my right foot. Amazingly one could slacken off the gas on the level and even going up hill watching the pointer on the gauge to get it as low as poss. I calc'd I saved 15% when petrol was (Jet) 4 shillings a gallon (1962), remember them? Forget the gizmos, the answer to fuel economy is in your right foot. Even after nearly 50 years driving I still drive as I did then and regularly get 50mpg out of my 1400cc car.0

The physics behind them seems ok; they claim to polarise the fuel molecules, thereby separating them out so they'll combust more readily.

I suggest you do this before making your mind up about saving money using magnets.
I assume you have a gas or oil boiler that heats your hot water.
Obtain a suitable strength magnet from a reputable company that supplies fuel saving magents for this purpose. You will get a 100% refund from a reputable company.
1. Run the hot water and put your hand under the tap.
2. Wait until you are comfortable with the temperature of the water coming out of the tap.
3. Keep your hand under the running hot water all the time.
4. Place the suitable strength magnet against the Gas or Oil pipe that supplies the boiler. If you can`t reach to place the magnet onto the fuel pipe as well as keeping your hand under the running water then get someone to place the magnet against the fuel pipe for you.
5. Now keep your hand under the running water and make sure the magnet is kept placed against the fuel pipe.
6. You must keep this process going for a few minutes until you realise the hot water is getting too hot for you to keep your hand under the running water, and unless you want to burn your hand.
7. Alternatively instead of keeping your hand under the running water you can use a measuring device. You can then measure the difference in temperatures.
8. Obviously some boilers are not operating with correct settings and this will affect the result.
9. Using a suitable magnet to get the best possible result is very important.
10. What do you do now ?

No, octane is about as non-polar as you can get.

Octane is just carbon and hydrogen, and the electronegativities of those two elements are practically the same. This means there's no atom pulling electrons towards itself more strongly than any another, hence the molecule is non-polar.
Something like ethanol, which also has oxygen in it, is a polar molecule because oxygen is much more electronegative than carbon and hydrogen. This means the electrons are attracted to the oxygen end of the molecule and it becomes slightly polarised.
