I think you came up with the top recipe yourself, a huge mug of tea and just keep on dunking ;)

Forget the orange juice with a nip of brandy - the ONLY way to serve it to adults is to soak the ginger biscuits in sherry ;)

Thanks so much all of you for the yummy ideas.:T I am almost drooling now thinking of them! That creamy log sounds gorgeous and naughty. I think I will go with the crumble topping idea - maybe mixed with oats as I realised I have some apples on the turn. If I have any left I might make a mini log (as there's only me to feed).

:D  Alas I have neither brandy nor sherry.

I've been enjoying this recipe all afternoon! There are still plenty to use up though.

Thanks again all of you! :)

I seem to remember that with that 'log' pudding (much better with alcohol that OJ I think) you needed to cut it sort of diagonally across the log - well at a slant, IYSWIM so that it's not possible to spot that it's ginger biccies.
It was such a 70s pud that, and like many of those, sooo nice. Think I may have to make one too !!

a rather nice dessert i remember making back in the seventies was a sort of sherry trifle thingy.
cover the base of a bowl with your ginger biscuits and pour over a good measure of sherry, then top with your custard (birds or the proper stuff), add whipped cream and then i used to dust mine with chocolate flake crushed up and add some pieces of crystallised ginger. its more to adult tastes but some kids like it.

I was a child in the 70s and I remember Mum making "fancy" desserts for dinner parties ... I wonder if this was one of them. I hated cream as a child so I wouldn't have been offered any.

Ooh sounds posh. Thanks for the idea. Hmmm, am noticing a boozey theme in this thread! :) Edit: Even more so now I've just seen Jacey's post! :rotfl:

Jacey is dead right - I can remember making it once or twice (for grown-ups only) with whisky to soften the biccys - it takes a good few measures, plus whisky in the cream. but ginger and whisky go together nicely and you could replace the chocolate flake with real bitter dark chocolate, you know the good 70% cocoa solid stuff.

I'm going to boring and stick with pear juice - because I've got some that needs using up! But I remember having a sticky toffee pudding in the Bushmills Inn with Bushmills added and it was gorgeous so I could see how it would work!

Of course, a little while in a low oven should crisp them right up again, should you wish to continue with your original recipe!!
