I have about three quarters of a packet of ginger nut biscuits left over from a camping trip. I really don't want to throw them away. I'm sure there must be something I can do with them - maybe a cheesecake style base? I have lots of jelly in stock too so maybe something using that would be good.

Doh! you made my suggestion yourself! Gingernuts make a lovely cheescake base - what time shall I come 'round?

Make one of those chocolate biscuit cakes.Melt loads of choc,stir in crushed gingernuts,raisins,nuts etc.Pour into a shallow tin and bung in the fridge.Sorry I don't have an exact recipe but I'm sure there are some on this board some where.0

I know a restaurant that makes 'cookies and cream' cheesecake. It's got crumbled up biscuit in the actual filling. (I am not adventurous enough to have made a cheescake yet, but that pudding is the main reason I keep going back to that restaurant!May all your dots fall silently to the ground.0

Hehe sorry Kaz but I think I might have to go with Thriftlady's fridge cake suggestion - not made that for years! Scuzz - how did you know I have a bit of a thing for soggy biccies? Trying to lose a few lbs though, yeah like I'm going to be able to leave fridge cake alone! The cookies and cream cheesecake sounds yum.0

Ginger biccies go particularly well as a base for a lime-flavoured cheesecake(see Becles' post on todays "Cheesecake" thread) or Key Lime pie.0

ginger also goes well with rhubarb.
use them in a cumble topping? make a ginger and rhubarb trifle/sundae thingy to your own recipe?0 -
