    The salmon version sounds yummy. We 'tastefully finished off' our chinese last night with a bag of haribo horror sweets between us (halloween gift from one of OH's students - he teaches supported learning music). Yes, I know, we're a pair of greedy sods!:o They were nice...!

    SanFran, are you still after recipes? Not sure if you have used it but there is a really good (virtually entirely vegan) site https://www.fatfree.com. You can type in your 'main' ingredient and it gives you a list of all the recipes which use that ingredient. It also has international cuisine listings and dedicated lists for things like tofu and seitan.
    Sometimes, I can't see the wood for the trees - or the couscous for the quinoa... 3 no spends so far for August 2011!

    Right, off the top of my head I'm going to make a casserole in the slow cooker (then I can leave anything I don't eat & have it tomorrow as well ;) ) and in theory I'll use 1 chicken breast, block of tofu (don't mind if this breaks down, as long as it gets used up!) some cabbage, onions, peas, carrots & mushrooms, and a packet mix from the cupboard. I think I might treat myself to some icecream from the freezer :drool: Well thats the plan, whether it comes to fruition is another matter :o:rotfl:

    I've been thinking... there is no way I'm going to get through everything in one week, I mean I like my food but ;):rotfl: SO this is an edited list (from post 1881) of what I'm aiming to use up this week while DD is away. Anything she will eat with no problems, and sealed packs are being taken off so its not quite so long and confusing for me! :rotfl:

    Right, we have:
    Freezer:
    Tofu - Firm silken style 349g x 2
    Burnt Bread Rolls :o
    Wholemeal Tortillas (8 pack)
    Garlic Tortillas (8 pack)
    Haddock fillets x 4
    Tuna Steaks
    Prawns 160g
    King Prawns 160g
    Chips - 1 meals worth
    Chicken Breasts x 6 individual
    Sausage (full pack) - only here to pad out meals with a bit of meat :p
    Chopped Cabbage 750g
    Diced Onions <1kg
    Sprouts
    Peas <907g
    Baby carrots <1kg
    Sweetcorn <907g

    Fridge:
    6 eggs
    Pur!ed Garlic
    Pur!ed Ginger
    Pur!ed Chilli
    Mustard

    Cupboard:
    Instant curry sauce
    Fajitas sachet
    Chicken Casserole mix x 2
    Lasagne Sheets - 250g pack
    Cous Cous Plain - 1kg
    Soya Mince - 300g
    Boil in the bag rice x6 packets
    Kidney beans
    Roast veg cous cous x 2 sachets
    Coriander & lemon Cous cous x 2 sachets
    Spring roll wrappers (12 sheets)
    Chopped Tomatoes

    I also have a selection of baking items, various herbs & spices including balsamic, red wine vinegar, Worcestershire sauce

    Although it still looks quite a bit, I'm not worried about using up all the cous cous, sausage, rice and bits like that. ;)

    LizzieB what is Seitan? I have never heard of that?
    I have to be honest being vegan in the UK is sssooo much easier in the UK! We had never heard of Quorn, or any other substitute other than tofu. Also cheaper, we can even eat out over here at our local Chinese place.
    One of the children can eat salmon, prawns and tuna, but not the other one or my self. So other than the odd tin he tends not to get too much.
    I still go shopping at the local US Airbase near where i live so can get the enzyme added milk, I can also buy the tablets to help us digest a little milk at a time, so a little powdered milk say in packet of cheese and onion crisps is ok but not much more than that.
    If anyone else need these the product is called 'lactade"they are not available on the UK economy but I am sure they sell them on line, if anyone need help to find them feel free to pm me.

    Feeling quite good about my efforts to use up freezer/storecupboard stuff this first week of my challenge.

    Took out of the freezer, 3 (of 6) chicken breasts and made curry with a tin of Tikka Masala sauce which I dread to think how long has been in the cupboard! and added some extra spices and cherry toms to. A pack of 2 small naan breads so curry for me for 2 nights this week.

    Also found 3 pork chops which I added to 4 pork links, some HM stock and veggies, all from the freezer for a casserole for today with mashed potatoes and will make dumplings too.

    Can see better just what else is in the freezer now and the plan for the week is to use up:-

    HM chicken pie x 1
    HM chicken and leek soup x1 (OH will take in a flask for lunch)
    Prawns & cooked chicken for a stir fry
    HM steak & kidney + puff pastry portions x 2
    Lasagne x 1
    HM lamb & feta burgers x 2

    That at least should free up some space and let me re-organise the drawers next weekend.

    San Fran how are you with goats milk or lactose free milk? (am I right in thinking that you are vegan due to allergies?)
    I thought that you could buy everything in the US! I suppose it does appear to be quite a meat eating culture, but with the health food culture too would have thought there would be lots of health food stores that would cater for a vegan diet? Does it depend on where you live?

    Are there a few vegetarians/vegans on this thread? If so is it harder to get meat substitutes then years ago, or not? I don't suppose if you are a largely bean eating vege that it is any harder to get goods, but it does seem harder around here to get meat alternatives, than when we were vege 20-15 years ago.

    Am I right in thinking you are in the UK, SanFran? If so, you can buy lactose-free milk in a lot of supermarkets now - even my parents' local shop, in a little rural village, has started selling it (which is great for me as I can now have milk while I'm visiting them).

    Of course, if you need a particular type of lactose free milk then this might not help you, but I thought I'd mention it as I use the stuff myself! :)
