It would be a nice feature if you could though.
Many a time has someone been thanked in error by someone that had actually intended just to quote them when replying.
Perhaps have a short time, say 2 minutes, to unthank someone so that the facility cannot be abused.

The "thanks button" forum mod that is installed here on MSE actually does have that option.
It's just that for some reason the MSE team has seen fit not to enable that option. :undecided
In fact in one of the board upgrades a while back, it made a brief (unplanned I presume) appearance.
