I actually just found a recipe card that had a bacon ribs recipe on it when I was out at Sainsbury's just before.
It suggests braising the ribs in dark ale until tender, then brushing with honey and mustard and finishing off in the oven until sticky. Sounds really good and I don't like meat on the bone!0 -
I was thinking of Bacon Bone Soup the other night so today i went to Birkenhead Market and bought some. I was amazed at how expensive they now are, £1.99 a lb! Two sides of ribs, about 15inches long each, came to £9.90! So not a cheap meal like i remember in the 60`s & 70`s. But the huge ham shanks seemed good at £1.75 each.0

Ham ribs.....mmmmmmmmmmmmmmmm!
My mum and grannie would serve the boiled ribs with cabbage cooked in some of the stock, and make lentil soup with the rest of the stock, although it can be very salty! My daughter called them ham bones and would have faught with anyone to get a platefuRIP Iain

We call them ham rib here and they are available from Morrisons butcher counter most of the time.

Bacon Bones! Very popular in Wales too.
Not the cheap meal they used to be, but SO good. Buy a bit extra, you`ll wish you had!
Not over salty if you soak & rinse first & change the water.
1)Soak in cold water for an hour or so, then rinse.
2)Bring to boil in biggest pan with lots of water.
3) Pour away the cooking water after about 20 minutes, start again with fresh water, simmer gently till meat is falling off bones.
The only acceptable accompaniment is home-made chips and mushy peas, loads of vinegar & white pepper over the whole lot. I`m drooling at the thought - now look what you`ve gone & done, OP!0 -
A hotel near me does these boiled and then coated in breadcrumbs and deepfried. I order it every single time i eat there.0

Bacon ribs are readily available in your local Morrisons just ask the butcher0

Like many on this site I have fond memories of the soup my dad used to make with a sheet of bacon ribs. Since then I have not been able to find any ribs anywhere... - until last Saturday. My wife and I were driving around the countryside near where we recently moved to and visited a farm shop.. I spoke to the butcher and asked him why I couldn't buy bacon ribs anywhere. His reply was I can so some for you - all he had to do was take a rack of pork ribs, place it in a plastic bag, sprinkle with curing salts etc that he uses to cure his own bacon, vacuum sealed it and that was it. Told me to leave it in the fridge for about a week, then wash well under cold running water and there you have it... Week is up this weekend, so fingers crossed the result will be what I have spent my life dreaming of..!!!!0

Sorry for the delay in reporting... soup turned out great. Been back to the butcher and now have another two racks of ribs curing in the fridge. All being well will have a new batch on the go next week...0
