Help!!

I'm making steak and ale pie for dinner, and it tastes awful, really bitter, its at the simmer stage, is this normal?

Any help appreciated!

Have you tried sprinkling in a teaspoon of sugar? I do this to take the bitter taste of tinned tomatoes out of chilli con carne - maybe it'll work for this too?

Given it a go, its certainly taken the tang off, though its stil a bit tart at the back of the mouth, oh well, its for hubby who has stopped off at the local pub on route home, hopefully he wont notice ;)

    Thank you

Might sound silly/obvious, but don't use bitter. Use a heavier sweeter beer such as Brown ale. That's why it's called "steak and ale" not "steak and beer".

My FIL & MIL have drawn our attention to Steak & Ale pies from a butchers in West Town - Hayling Island, Hampshire. They are to die for - SO yummy!!!

I have tried re-creating and whilst I've been able to get the steak perfectly cooked (which I understand is half the battle) I have not yet got the taste right. I've tried Hobgoblin Ale and I'm guessing that might be the problem? They also use shortcrust pastry instead of puff and I'm quite happy to stay with that!

Would be grateful if you would share your recipes and secrets. I'm so close to asking the butchers for their recipe.....! :rotfl:

    Thanks in advance! xx

Is it possible they may have kidney in the gravy. I know that when I tried to copy a really nice pie that is what was missing. There where no lumps or anything. It had broken down into the gravy.

Hmmm - I wouldn't have thought so as they also sell a 'Steak & Kidney Pie'.... I could be wrong though..... Would be horrified if I'm eating Kidney, though!!

Here's the recipe I've tried - perhaps it's not quite right?!?

    1kg braising steak
    500ml Ale
300ml water - (I think this was a bit too much)
    3 beef stock cubes
    2 1/2 tbsp flour
    2 tsp Dijon mustard
    Shortcrust pastry

PS - We don't like onions so I've left them out but there aren't any in the Hayling Island pies, either - unless they are liquidised!!!

I think it's either something wrong with my recipe or the ale I'm using but I'm up for suggestions!! xx
