    I used to work in a pub that did Steak & Ale pies (homemade.) They used Murphys and there were onions, but the meat was braised so long, they dissolved into the gravy! They also put a bit of sugar in too.

    How about using a different cut of meat, I usually use either Shin Beef or Skirt. Cooked long and slow, they have loads of flavour.

    A big thanks to everyone for your replies! I can't wait to have another go at making Steak & Ale pie! So many different ales to try :beer: ! :rotfl:

    Thanks for the hints and tips. Hopefully I'll get it right sooner rather than later or else I'll be sick to death of Steak & Ale!!!

    Definitely going with the slow cooker option and definitely marinating the meat in the ale beforehand.

    What would I do without you lot?!? :T

    I tried the chicken one on here the other day and was very impressed with myself, i have a friend coming for dinner who wants to try my pie (she's italian is all pasta and bread with her) but doesn't like chicken

    Can anyone help?

    Another vote for using guinness here!!! I dont have an exact recipe as it all in my head lol!

    I usually fry chopped onions and garlic in a little butter and oil till softened and then set aside. I then dust some diced beef in plain flour and them brown it in the pan I just fried the onions in.

    I then re add the onions pour in a bottle of guinness (330ml) and a bit of beef stock. Add a handful of mushrooms , season and add a dash of worstershire sauce and your away. I bring this to the boil and then let it simmer for about an hour, the guinness magically tranforms into a beautiful gravy. Transfer to an ovenproof dish and cover with puff pasty, bake for around twenty minutes and oh wow!!!!!!!!!!

    Easy Steak 'N' Ale Pie

    2-3lb Braising steak roughly cubed and tossed in cornflour & browned in pan.

    Add steak and the following to a slow cooker.

    Guiness (Bottle or can)
    3 beef stock cubes
    2 tsp mustard
    splash soy sauce
    shallotts
    button mushrooms
    salt & Pepper

    cook on low for a couple of hours or as long as you like if you are going out.

    Top with Herbs mixed in mash potatoes

    or

    Top with rolled out shortcrust pastry bake at 200 for 20-25 mins.

    Eat or cool and freeze

  • Hi I just tried to make steak and ale pie and its not very nice I used the hobgoblin ale as i liked the bottle :o
    made it to the recipie on there site but found it has a nasty bitter after taste
    anyone got any idea's so far from this thread I have added worchester sauce and a spood of sugar but that taste is still there
    I think I might drain the gravy off and re do some gravy out of a packet to try and lessen the bitterness any idea's for nexttime?

    The pub I used to live beside used Boddingtons and it was lovely. However I haven't been very successful in using ale in pies. I always get a funny taste to them

  • Just wondering, did you add any sugar? I add a spoonfull of sugar which seems to 'mellow' the ale, pop it in just after you have browned the steak.
