Anyone made crumpets/pikelets?

I went through a phase of making crumpets regularly. Very easy & cheap, and less butter used.
I used a clean heavy non-stick frying pan, warmed on hob, rub with a block of butter, grease egg-rings with butter and pop into pan, pour in batter into each ring and cook slowly till top of crumpet solidifies with little holes appearing - then rub tops of crumpets with block of butter, remove rings and turn crumpets for a minute or 2. Very nice, and simple.0 -
Ive never made crumpets, but pikelets I remember nan making! they are like a version of drop scones - she made them on her bakestone and they were gorgeous! smooth on both sides unlike crumpets which are smooth one side and holey the other. you do need a really heavy pan or smooth griddle and when you put the batter on, you cook it until the bubbles pop then turn it over. Nigella has a recipe which is nearly identical to the one Nan used. it should be on www.foodnetwork.co.uk . my sis uses this recipe and it is really nice!0

Roosterpotatoes - sounds like your crumpets aren`t cooked through. Don`t be afraid to cook them a little longer, but I do suspect the pan isn`t right. A thin pan would cook the outsides quicker, maybe that`s the problem?0
