A few months back I attempted to make some rum truffles. They were rubbish - didn't set properly and quite frankly just not enough rum in them
Does anyone have a fairly easy receipe for them? I don't want to waste more ingredients making something that doesn't work.

My mum makes truffles with Bournville chocolate, ground almonds and brandy. They're really great. If you'd like the recipe I'll have a look later when I go home.0

You didn't chuck them out, did you? In this situation what I would have done was re-melt the truffle mixture in a bowl over some hot water and add a little more butter (to make the mixture set at room-temp) and add a little more rum for flavour.
I'd be interested to see a recipe as I'd love to make some myself but am not aware of the correct proportions either.
I wonder if the truffle mixture would be good with Grand Marnier as I have a half-used bottle kicking around here and nothing to do with it at present0 -
I added more rum and mixture was too wet so added more cocoa powder - they were alright I guess just not as good as I expected due to the extra cocoa I'd added. I'd made them for my mum's birthday - she still scoffed them LOL! I thought they could have been better.
Thanks for the link Pen - will have a nose.
I guess I'll have another google, experiement and let you all know!I have a gift for enraging people, but if I ever bore you it'll be with a knifeLouise Brooks

Delia's recipes never let me down. She has an Irish Whiskey recipe that you can use, swapping the whiskey for the rum.
Or her other truffle recipes are hereWarning ..... I'm a peri-menopausal axe-wielding maniac0 -
Here is the recipe.
Truffles
4oz Bournville plain chocolate
2 tbsp brandy or fruit squash
1.5 oz unsalted butter, softened
2oz icing sugar, sieved
2oz ground almonds
crushed flake/cocoa powder to coat
Makes 16
Melt Bournville and brandy over a pan of hot water.
Take off heat and stir in butter.
Mix in ground almonds and icing sugar. (If my mum thinks it is too runny, she adds some more).
Roll into 16 balls and toss in flake or cocoa. You need to work quite quickly before the mixture sets in the bowl.
Place in a paper case.
Truffles keep well in a cool place. They can be frozen, but the liquor taste and smell disappears in the freezer.
This came from an old Cadbury's cookbook, hence the reference to Bournville. I'm sure other dark chocolate could be used, though we've never tried. These are about the most requested thing to be baked in our house. Enjoy!:)0 -

Yup, I can sympathise with that. I think the argument is that it "stabilises" the whole mixture - and it seems to workWarning ..... I'm a peri-menopausal axe-wielding maniac0
