Easy Chocolate Rum Truffle Recipe?

Zippy I hope you see this as I have made rum truffles tonight. I used Chem_j's receipe but I must say 2 tbsp is NOT enough booze - I couldn't taste it so I added an extra 4 (so 6 in total). they have a definate kick now LOL!!!
Receipe was easy to do but because of the extra liquid I did end up adding more sugar and ground almonds. bunged it all in the fridge to cool a bit and then rolled into balls and coated in cocoa.

5oz Green and Blacks, grated.
9oz boiling double cream.
Pour cream on chocolate and stir until dissolved. Allow to cool slightly, then add 1-2tsp of alcohol to taste. Allow to set until it can be formed into balls with teaspoons, roll truffles in cocoa powder.import this0 -
I've got a 250g jar of rum butter, unopened since last Christmas, past its BBE but still smells good. Could I make rum truffles with it, and if so, how much icing sugar/cocoa/chocolate do you think I should add? It's already got some sugar in it, and set quite firm.
Or any other ideas what to use it for?If I'm over the hill, where was the top?0
