    quick question:
    how stiff do you have to make the "stiff peaks" when making pavalova!? mine is definitelypeaking, but im not sure as to the stiffness!!!!!???
    does that make sense!?

    Is it so the tip of the peak 'just' drops over? Never made one though!

    Molly rolled over this morning! She looked thoroughly alarmed to have done it :rotfl:

    Anyway, labour dust where needed, I think Amber's a lovely name - and I have something some of you might like to see:

    Basic cheesecake recipe ingredients using shortcake biscuits
    Carnation caramel (squeezy tube easiest)
    200g dark chocolate
    Splash milk


    Make base and then make a plain filling. Squeeze in the caramel.....enough to taste. Spread over base and chill.

    Make the chocolate topping by melting the chocolate over a pan of simmering water with a splash of milk. Keep stirring until the chocolate is melted and the mix is glossy. The mix shouldn't be too hot but when it is warm, spoon over filling and spread. You will need to remove from fridge a couple of hours before eating so that the chocolate isn't too hard.

    so stiff that they stay in the bowl if you hold it upside down.
    it won't work if the bowl has any grease in it so use a glass or metal bowl and wipe it out with the cut side of a lemon to make sure its super clean :) (if you need to redo)
