Hi All,
We are trying to eat more healthy and also save money...we buy chicken breasts/mince and seem to be having the same meals week in week out:
lasagna,spag bol,shep pie,chicken tagliatelle,wraps....it is soooo boring!!!
I love the idea of a chicken casserole, but how do you do the chicken?Do you fry it first then put it in slow cooker?or just put it all in together raw and cook all day?
further,does anyone have any other ideas for meals?we dont like chilli con carne which i think is the only thing left to do with mince lol

One of our faves is to make meatballs with the chickne mince and put a green olive in the middle of each. Refrigerate for a bit then dry fry til nice and brown. I usually make a sauce with onion, garlic, stock, spices and some chunks of potato, add a handful of olives into the sauce near the end too. I normally just take all the skin off so it's not fatty then put it in the slow cooker raw, with the stock and veg - tinned toms go really well with it.
Then bring it up to the boil in the slow cooker and turn it down and leave it all day to cook.
It's a good way to cook chicken drumsticks - always skin them though - you get loads of tasty gravy.
If I roast a chicken I do a kind of cheesy pasta thing with the leftovers.
Just fry veg (mushroom, a handful of frozen peppers, onion, whatever) throw in a handful of chicken pieces.
Cook some macaroni and throw that in.
Then pour and stir cheese sauce into it. Easy.
Very very tasty

Don't use chicken breast in a casserole, such a waste! Use thighs or drumsticks. I take off the skin, and brown it first with some chopped onions, then usually add mushrooms and a tin of campbells soup. They do a white wine and chicken one, but chicken alone or mushroom works just as well. Put in a low oven for at least an hour and a half, or until the meat falls off the bone. Done!I Believe in saving money!!!:T

I do exactly the same, but in my slow cooker:) I normally use Campbells soup and serve with pasta. If you have any left it can used as a pie filling and served with vegetables0 -
I like chicken in a white wine sauce - and find that its far cheaper to let Homepride do the hard work - I just open the can chuck it over chicken thighs and drumsticks and leave it cook for an hour or so! (I think its moneysaving cos it costs three times as much to buy a bottle of wine and carton of cream!) besides which, OH really likes it!0

Mince and chicken are the staples in our house too! I make a creamy chicken dish by slicing and browning half a leek, adding a couple of rashers of chopped bacon then some chicken breast. When the chicken has changed colour add a heaped table spoon of flour then enough milk to make a creamy sauce. Add salt and pepper and a few herbs (a little tarragon is good) and simmer until the chicken is cooked. This can be served with pasta or made into a pie. Ready made frozen puff pastry is nice on top.
You can make a mince cobbler which is nice. Make your shepherds pie mix but instead of putting mash on the top make some savoury cobblers. Put 6 oz self raising flour in a bowl and rub in 2 oz margarine. Add 3 fl oz of milk to make a dough then roll out and cut into circles. Cover the top of your mince with the cobblers and bake for about 25 minutes.
Mince beef hotpot is another alternative. Again start out by making your shepherds pie mix. Peel some spuds and slice. Put them in a large bowl and zap in the microwave for 10 minutes. Then layer the mince and potato and bake in the oven for about half an hour to 45 minutes. This is really nice done in the slow cooker.
Have you ever made meatballs? They are a bit fiddly but make a nice change. What about a home made chicken curry? Doesnt need to be very spicy.
If I am cooking chicken thighs I always cook them in the slow cooker then take the meat off the bone before making a pie or casserole. I dont like meat on the bone and doing them in the slow cooker makes the meat fall off so its really easy. I sometimes make a chicken pie with a suet crust (6 oz sr flour, 3 oz suet and enough water to make a dough). This is a doodle.

Does anyone have a nice chicken casserole recipe the could recommend please? (Maybe to be done in a slow cooker?)
I have 6 chicken drumsticks to use up & a standard store cupboard. We've had a North African tagine type meal with couscous already this week (to use up the other half dozen chicken drumsticks) so any non-fruity North Aftican stew type recipe would be greatly appreciated.
