Freezing Corned Beef

Hi all

I bought a tin of corned beef for us to try, but only I like it. Have used half the tin and don't want to waste the rest. Can I freeze it? Have looked on the tin but it only says refrigerate and use within 2 days.

    yes you can i find it cheaper to buy a big tin so i freeze the rest and its always been alright, i put it in freezer wrapped in foil

    My corned beef would never make it to the freezer - I eat it cubed and dipped in salad cream as a snack.
    The ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.

    I cooked the corned beef with tinned tomatoes, onions, mushrooms chilli powder and black peppper, then served with white rice.

    DDs 1 + 2 didn't like it, although they eat other meats using above ingredients.

    Any other ideas how it could be cooked. Not sure about eating it cold.

    Have stuck the rest in the freezer for now though.

    Thanks for that idea, Pipkin71 - I've never cooked my corned beef before so will be trying your recipe (love tinned tomatoes, onions, mushrooms, chilli powder and black pepper - and white rice - so don't see how I can go wrong there really!!).

    Personally, I've been eating corned beef since I was a very little person and my favourite way (so far...) is in sandwiches with Branston pickle (does that count as blatant advertising...and is blatant advertising allowed here...?!?!).

    Hope you enjoy it piglet. We've never eaten it before so I was experimenting. Will have to try it cold on sandwiches, maybe the girls will like it that way and it makes a change to the ham sandwiches they always have in thier lunchboxes.

  • corned beef is yummy in a quiche. we have it choppped up in there, and that freezes well.

    I would not advise freezing any tinned protein. Its just that is has had one process of preserving done already (canning). The same applies to refreezing, you shouldn't freeze something that has been frozen before.

    The gaps between preserving allow bacteria to multiply and therefore increase the risk of food poisoning

    I love it in jacket potatoes with cheese, or corned beef and brown sauce sandwiches, yum!

    I freeze it all the time, sliced, cubed and in a lump. My OH loves it cubed in hash, but I sometimes use it mixed with onion and a little mashed potato in a pie. It's lovely hot or cold.

    Love your ideas sweetpea and pol. Who would have thought you could do so much with corned beef? Will definitely try with jacket spuds. My girls thought it tasted too salty. Is this normal or just the brand I bought? Thanks for your advice Jazzycat. Have frozen the left overs, and hope it's okay to eat after freezing, but still not sure. Other posters don't seem to have a problem but dont want to end up giving girls food poisoning
