Dinner tonight is turkey enchiladas, rice, refried beans ( anniefanny are you around to tell us how to make this) sour cream grated cheese. All from the store cupbard, freezer & old veg in the fridge

MMmmmmm well our dinner 2nite is roasted veg pasta - the left overs will be my lunch 2moro (with creme fraiche and wholegrain mustard mmmmm)

I quite like beanfeast though havent had that for a while, I f I get desperate at the end of the month, I can see me buying a few bags of that out of the change in the budget..
the pasta sounds good though. I tend not to eat that very often as it makes me into the michelin woman - so bloated.
I have already made up 2 spare enchiladas in lunch boxes cooling, one for OHs lunch tomorrow, and one for the freezer so he doesnt have to have it 3 meals on the run lol :A
I can see me getting quite into this again this month.
Annie, might pretend I never heard that they have lard in. Maybe thats why they have such a rich flavour. Ooh a challenge! I think I'll watch from the sidelines and see how it goes on. In a DFW style I made pie last night - one for now one for freezer. Therefore lunch today = pie, dinner today = pie & chips, lunch tomorrow = pie... (the joys of cooking for one!)
