quick help re alternative roast chicken?!!!

    Hi merlin,

    Serve it with salad? Slice some, chop it into chunks, roll in hm pancakes and cover in cheese sauce? Serve it with couscous and moroccan spices? Use it to make a pasta bake or chicken fried rice? Whip up some shortcrust pastry and turn it into a pie?

    sounds lovely toonie but no cous cous - my oh cant stand it :cry: i quite like it though!men! :mad:

    i am leaning towards tatty wedges and gravy???

    whats doing me is all the herbs on it and the stuffing - think paxo! its screaming heavy, tates, veg, gravy, and yorkies - but what else goes with these flavours? would love something differnt! :think:

    oo thanks all and pink winged,i made a pie with yesterdays chuck (hence the reasons for needing something different!)! but i love the sound of the pancakes and cheese sauce, i have even bought some pepparami could chuck that in too! hmmmmm thankyou! it is the herbs and seasoning and stuffing that was stifling me, i'm a bit naive/ old school with what goes with what!

    just though i'd update and say thakyou again!

    i took the meat off the chicken and mixed with cajun spice - then rolled in hm pancakes, put them all in my lasagne dish and covered with a rich hm cheese sauce - it was delish! so thanks again :cool:

    Hi all,

    Really fancy a roast chicken today but I'm sick of just roasting it and serving with veg and gravy...

    Anyone have an alternative roast chicken recipe and way to serve??

    I would like to use the leftovers in a risotto or pie tomorrow so I guess I need to bear that in mind too!

    Stuff the cavity with quatered lemons. Ease the skin away and put slices of garlic slices under. Rub it with oil and salt and pepper and roast.

    Not sure if this is what you have in mind, but we put 'chicken spice' on the skin to make it tasty and crispy, then place the chicken on a grid over a mix of veg, so the juices drip down onto the veg and make a nice base for gravy. It is 'just' roast chicken, but we use unusual veg like butternut squash, sweet potato, sweet peppers, mushrooms etc along with more normal veg like parsnips, red onions and carrots. We often don't bother with things like roast potatoes etc if it is just us.

    Not drastically different, but we like it, partly because it is so easy! You could also try putting things inside the chicken to flavour it, like garlic or a lemon. You can also stuff things under the skin if you like.

    In a pot deep enough to put the chicken in place a layer of 40 or 50 garlic cloves (unpeeled). Lay the chicken (with some parsley stalks & thyme in the cavity) on top. Drizzle over a good slosh of olive oil then about half a bottle of white wine over the garlic. Cook the chicken for the usual roasting time but with the lid off for the last half hour. Remove the chicken to rest. Meanwhile remove the garlic with a slotted spoon & squeeze out of the skins. Mash and serve with the chicken. The remaining juices can be made into a gravy as normal.

    Garlic is very mild & sweet done this way so don't panic about the amount.

    Roast as normal and serve with new pototos and salad (you cant really make it taste too different if you need the leftovers for a pie)

    This is what I do when I can't be bothered to stuff a chicken:

    Put a bunch of fresh rosemary in the body cavity. I'm lucky enough to have it growing the garden so I always have plenty.

    Insert a sharp knife into the flesh, twist to create a hole, insert a sliver of garlic into the hole. Do this as many times as your taste for garlic allows.

    Roast in the normal way. The flavours of the garlic and rosemary are delicious and even the gravy tastes different.

    As gizmo says, ring the changes with new potatoes and salad, or with roasted veg and rice or couscous so it feels less like a roast meal...perfect for a sunny day like today.

    Alternatively you could roast the chicken normally and then use some of the meat to make any number of dishes eg chicken fried rice, curry, pasta bake, coronation chicken etc. Lots more ideas on this thread:

  • Rub with olive oil. Sprinkle with salt, pepper and cinnamon powder. Cover with thick slices of tomato and onion, possibly some oregano (small leaved) or thyme/marjoram. Cover and roast. Serve with steamed potatoes, carrots, cologasi or anything else you fancy.
