quick help re alternative roast chicken?!!!

Afternoon

I have a chicken that needs cooking, and I all ever do is roast it!

Does anyone have any ideas! Im not good with fresh chickens and always cheat and buy seperates!

I have some of those chicken tonight sauces that are on BOGOF in tesco, but have no idea how to cut up a chicken!

    How to joint a chicken.

    This is a favourite in my house, adapted from the More With Less Cookbook.

    Honey-Baked Chicken

    I prefer to skin the joints but you don't have to. Arrange them (skin side up if not skinned) in a shallow baking dish.

    Combine and pour over
    2-3 oz melted butter
    2-3 oz runny honey
    2 tbsp mustard
    1 tsp salt
    1 tsp curry powder

    Bake for 1¼ hours at 180 c. Serve with rice and salad.

  • If you have a large enough saucepan you can poach a whole chicken (in water with some bay leaves, peppercorns, veg) - makes a nice change from roasting it and the liquid keeps the chicken nice and moist. Plus you get a nice light chicken broth/stock as well which you can use with the chicken or freeze for another time.

    If you poach it & keep the stock, try & skim the fat off it (& throw it out).
    I find that the better the chicken, the better th stock - use it in soups etc.

    I don't know if this will help but this is what I do.

    Buy two whole fresh chickens from Tesco, on offer at two for £5:00.


    Cut the chickens into portions as follows:
    4 x Breast cut off the bone with skin removed
    8 x Mini fillets (cut from Breast)
    4 x Thighs
    4 x Drumsticks
    4 x Wings
    Use the carcase and trimmings with vegetables to make up to 4 litres of stock.

    This enables me to make 11 individual meals for one.

    Cover chicken pieces in pesto sauce (thickness depending on how much you like the taste) and then roll in crushed cornflakes. Bake for 30 mins for a lovely tast and healthy crispy chicken piece. Sounds weird but gorgeous. Serve either with SW chips or a pile of stir fry veg.

    i have a very nearly cooked, seasoned, herbed and stuffed chicken in the oven but dont fancy a full on roast, what can i do for something different? something a bit lighter but must be quick cos time is getting on!! :rotfl:

    what would go with the above? :confused:

    Do you have any couscous? If so, make it up and have roast chicken with couscous and maybe cook some veg (sweetcorn/peas are good).
