Can we cancel by letter?

My dp agreed to have a salesman come round on Monday to get a quote for a new kitchen. We only wanted a quote. to see whta sort of figures they came in at and then we would think about it, see what we do for fudning THEN decide wether to proceed or not. This is our first home, so have not been through this sort of thing before.
The sales guy was very pushy, and spent 4 hours giving us quotes and dropping the price for special offers, his final offer was still high, and we were still wanted to get other quotes too. The guy said he couldnt leave this quote with us to think about, he needed an answer right there & then. If we went ahead later on, teh price would rise by about £3k.
He talked DP into agreeing on it, with finance (!!) but I made sure we could cancel if we wanted to. He said sure, you have 7 days to change your mind. After 4 hours, I just wanted him gone & out of my house!
We discussed it after he went, and decided we did not want finance, and after discussing last nigth, decided we cant afford a kitchen at all. I dont want to be in debt.
Today, dp phones them to cancel. they said fine, put into writing & send it to us. Now, half an hour ago I got a phone call from them, wanting to know what the problem was, asking if a lower quote would help etc etc. then the caller said they needed to send their sales man out again to get a cancellation certificate signed. Is this true? Surely a letter of cancelation is enough? She also said they would bring along a lower quote "just to see".
I dont want them in my house again, and I dont want another 4 hour sales barrage. Do I have to sign this thing? They said I definitely do, but Im nor convinced.

Cancelling by letter is more than acceptable.
The right to cancel within 7 days is granted to you under the rather long named: The Cancellation of Contracts made in a Consumer’s Home or Place of Work etc. Regulations 2008 *takes a breath*.
Firstly, you should have (provided by the salesman), in writing, the details of your right to cancel. This would normally detail their preferred process.
If there's no form provided, then simply look at the page for "Information to be Contained in Notice of the Right to Cancel" which gives an idea of all it needs to say (although you don't have to use their layout, wording etc).
Sign it, send it recorded delivery and then they have little come back saying they hadn't received it. And just to give you a little more weight, section 8 confirms that A cancellation notice sent by post is taken to have been served at the time of posting, whether or not it is actually received.

The cancellation certificate sounds like bullcrap.
They just want to get the salesman back out to have another chomp at you.0 -
I thought so. I have already typed out a letter, and posted it, before their phone call to us So I can phone them and tell them not to bother coming on Friday?0

The Pedant, that was REALLY helpful! I am always concerned with those people- especially the gas man who comes once a month to try to get us to change/get a new meter...If you aim for the moon if you miss at least you will land among the stars!0

could they try & chatrge us though, if they come out & we dont answer? Im worried we will get soem sort of charge for not cancelling "their way"0

For future reference, the answer to the above statement is "Ok, the answer is NO. Bye bye now."
I would of said to him as soon as he walked through the door "Just to let you know, we NEVER buy anything without getting three quotes first so whatever happens, we won't be signing anything tonight, no matter what the offer is."0
