Quiche and omelette sprung to my mind too. Are they too foreign?Anyone who lives within their means suffers from a lack of imagination:beer:

My favourite egg thing is tortilla baked in the oven. Fry up some veggies and bacon - whatever is lying around - whilst preheating the oven to 170 C. This can also be done in the oven. Then break 6 eggs into a bowl and whisk. Season. Pour over veggies and top with grated cheese, if desired. Bake until golden.
The recipe changes all the time. It's like quiche but no pastry. If you have the oven on, you could also bake a cake to go with it and a traybake for the freezer.0 -
WoW. gobsmacked TY all ! - em, quiche isnt too foreign no, but will have to consult with his nibs as to tortillas !0
