Hi I want to make a quiche and the recipe says to bake blind, I don't have baking beans, if I line with foil and use split peas will it work, I don't have any larger dried beans or pulses in at the moment.1 Sealed Pot Challenge # 1480

I don't bother with anything to weight it down, just pr!ck it all over really well with a fork. It may puff up a little if you miss any areas, but if you are really thorough it will be ok.Trust me - I'm NOT a doctor!0

In the past I've used greaseproof paper first then a smaller pirex dish placed on top. If you have a smaller oven proof dish, any would work. For instance the lid from a casserole dish.0

If a recipe says to bake blind I never bother. I am sure the more 'professional' cooks would say that is a process that is needed but ive never had any problems.0

i use flour generally but rice works really well tooThe only people I have to answer to are my beautiful babies aged 8 and 50
