If she has no clue this is coming, and you want to keep it that way, if you have time before you go, you could get a ring box, and either get a jeweller to engrave on a little silver 'token' (ideally heart-shaped) the simple letters 'iou', or just write a little note yourself to pop in the box. That way, if she is sentimental, she can treasure that little token.

OP, if you like my idea at all, whilst I can't find anything with the IOU on it, simple hearts do exist with the word 'love' on it - you could put one of these in a ring box:

Well, as promised, I've got back and thought I would let you know how it went.
I went with the homemade ring, made myself from a few sparkly pipe cleaners and a plastic crystal. We went out for a meal at a seafood restaraunt overlooking the sea, I got down on one knee............ .............. ................. ................. ............... ............ and she said yes:D
She absolutely loved the idea of homemade ring which has took pride of place in her memory box and we got the ring that we both loved at a jewellers in Mexico for a bargain!!!:money:
