Depends on what you mean by protect from theft.
TrueCrypt will encrypt the contents but that's all I can think of for now.

Drag'n'Crypt ULTRA (DCU) is a small and easy to use file encryption program. You drag files to encrypt onto the DCU "drop zone" (or on an icon present on you desktop) and DCU will encrypt files with the very safe Twofish encryption algorithm. Decrypting succeeds just as quickly and easily in the reverse way.

Its very small and can sit on you usb stick.

TrueCrypt is probably the best open source software I've used for this purpose. Just make sure you read the manual twice.

    Hope this helps.

Not in the way Drag'n'Crypt ULTRA is, try it, a lot easier than Truecrypt! Not slagging truecrypt btw.

Also WriteProtector is worth a look.
