    Personally I love meat, but love veggies too, so my diet has both in it.
    Each to their own, unless they are cannibals and want to eat me :eek:.

    Even though we are in the main omniverous in our house our DD is a veggie so I do quite a few veggie meals that we can all enjoy (even DH who can't live without meat - I usually just stick a pork chop on his plate to keep him happy)

    We're not veggies but we only eat meat a couple of times a week, so a lot of our meals are veggie, and we don't eat Quorn or other meat substitutes as I don't really see the point, I'd rather eat lovely veggies and pulses than something pretending to be something else (if you see what I mean). Some things I find very useful are:

    Dried mushrooms
    Tinned tomatoes
    Risotto and basmati rice
    Dried beans, chickpeas and lentils (and my beloved pressure cooker which cooks them in no time)
    Always on the windowsill I have basil and parsley growing, and some coriander puree in a tube in the fridge
    Eggs
    Potatoes
    Dried pasta (I like fusilli or penne, spaghetti and lasagne)
    Fresh garlic

    I know you said you don't always have fresh veg but I make sure we always have potatoes, peppers (red, if I can only have one color), onions and carrots. Of these, the onions are the most important. I think most of the meals I cook start by sweating off an onion :)

    We eat a lot of veggie curries, pasta dishes and risotto.

    I've been veggie for almost 30 years now. A meal that that the whole family enjoys is pasta. I have been using this recipe since before the children were born, my eldest is 12 and can now make the sauce herself:

    Tin of chopped tomatoes
    Olive oil
    Garlic to taste
    Bay leaf
    1/2 tsp salt ( I don't use salt in anything else!)
    1tsp sugar
    Mixed herbs

    Bring to boil and the gently simmer until desired consistency. Serve chunky (husbands preference) or blend for smooth sauce. Serve with pasta.

    Alternatives:
    Add mushrooms and simmer for 30 mins or for meat lovers it makes a good spagbol base! Cheap and easy but very, very, tasty!

    I'm out of work at the moment looking after my mum but not getting carer's allowance so I am doing extreme money saving.lol.

    I used to buy green and red lentils but am now substituting split peas because they are cheaper. I also buy packets of dried kidney, chickpeas and harricot beans. Soak and cook the whole packet and then freeze. When you need some give it agood bash and you can take what you need. Cheaper than tins.

    Passata is cheaper than tinned tomatoes per kg in Mr T's.

    Frozen sweetcorn is cheaper per kg than tinned.

    Garlic powder is cheaper than cloves.

    I grow herb and salad greens.

    I keep dried milk powder to make yoghurt and cook with.

    Eggs from the farm down the road.

    Rice, noodles, polenta powder, potatoes, strong, plain and SR flour, oats, raisens, value pasta, spices, original Bisto is vege, grated value cheese, onions, suger, oil, vinegar, soy sauce, tom puree

    Both myself and OH are vegetarian. I always try to keep the following:

    Dried chickpeas
    Dried kidney beans
    Black eyes peas
    Green lentils
    Red lentils
    Black lentils
    Vegetable suet
    Pasta
    Rice
    Tinned tomatoes
    Various spices
    Creamed coconut
    Coconut milk
    Veggie stockcubes
    Eggs
    Cheese (must be honest - I do not always buy veggie cheese!!)
    Frozen peas
    Frozen spinach
    Onions
    Veggie sausages
    Couscous


    Some of the meals I make are:

    Toad in the Hole
    Goats cheese and roasted red onion tarts
    Mushroom and spinach lasagne
    Pizza
    Spicy chickpea, onion and potato pasties
    Egg and lentil curry
    Chickpea and spinach curry
    Lentil patties
    Onion and mushroom suet pudding
    Shepherds pie with a filling of various veg topped with ordinary mash and sweet potato mash
    Stuffed large mushrooms
    Mushroom risotto
    Pea risotto
    Cauliflower souffles
    Beanburgers (using chickpeas, kidney beans and black eyed beans)
    Paneer cheese tikka with rice
    Vegetable chilli and rice
    Spaghetti bolognaise made with red lentils
    Tortilla
    Omelette
    Falafels with salad
    Veggie sausage, mash and fried onions
    Stir fry

    I have been veggie for 18 years now and I think the best thing you can have is a really well stocked storecupboard I am thinking

    Veggie worchester sauce
    tabasco
    mayo
    sweet chilli sauce
    paprika
    various herbs
    curry powder
    garlic
    dried herbs
    tinned toms
    jar of roasted peppers - the oil is amazing
    jar of sundried tomatoes
    salt
    pepper
    rice
    pasta
    chutney - esp caramelised onion
    mustard
    flour - cornflour, self rasing, bread
    baked beans
    dried fruit
    sweetcorn
    marmite

    also make sure you keep a stock of eggs,cheese, butter, cream/creme fraiche or milk, loads of fruit and veg and frozen veg - peas in particular

    I am not a big fakey meat eater I tend to make things like spicy rice, pasta, omellettes, veggie lasagne, jacket potatoes, curries, veg casserole, soups, stir fries, pizzas, ratatouille etc it may be worth you writing down which meals you eat are already veggie - you'll be suprised how many are!
