Hope you don't mind me joining your discussion: what about basil - I have a pot on the window sill looking a bit tired - is it worth chopping up and freezing or should I dump it in the composter?

hi wow thanks for all your help and replies, think I will start to use all the spare herbs up in frozen butters (for steak, fish, jacket pots etc) flavoured oils (salads, on feta etc?) and in ice cubes, will just experiment see which works best. for each. thanks so much0

Hello everyone, can someone please tell me if it is possible to freeze corriander, and if so what is the best way to do it and still preserve the taste?

Hi carmen,
Yes you can freeze coriander. The best way to do it is to make a paste of two parts herbs to one part olive oil in your food processor. Then freeze in ice cubes.

We love fresh herbs and I eat a field full of flat leaf parsley, I could convert my garden to growing it however with three dogs I dont think this is necessarily a great idea!!!!:rotfl:
So my question is can you freeze fresh herbs or should they be lightly blanched to keep colour.
I do use dried and a lot of home grown rosemary but I do prefer fresh.
Any ideas?

You don't need to blanch them.
If you are only using them for cooking, put portion sizes into an ice cube tray and fill with water. All you need to do then is pop an ice cube or two into whatever dish you're cooking straight from the freezer.I am the leading lady in the movie of my life

I freeze and use rosemary straight from frozen. I have also done the same with thyme. I imagine it may only work with woody herbs.0
