I tend to chop them up and freeze them in a little water in ice cube trays - when you need some, just pop a cube into what you are cooking. i just cut them and put them in old ice cream plastic boxes and bung them in the freezer.. no water just the herbs
when u come to use them i just crush them into whatever i am cooking

Thank you for the replies, I guess it is easier than I thought to freeze them. that is a great site Lil me:T with tons of information. I am going to have to get braver and start to use the fresh herbs more. I have rosemary growing well in the borders and use that a lot with roast potatoes. Not sure what to use the fennel with but it looks lovely!:o Can I use the bulb after havesting the herbs?Our days are happier when we give people a bit of our heart rather than a piece of our mind.

Hi does anyone have any tips on freezing or storing fresh herbs? I usually buy the packets of cut ones and am hoping to spread them over more recipes and stretch them further.at the moment i am freezing anything in ice cubes but have read that the softer herbs should be frozen in ice, the coarser herbs frozen dry. also i thought about making herb butters (from delia online), not sure if all herbs are ok for this? just tried to freeze some mint in an ice cube bag and it was a disaster ..... any hints much appreciated thanks!0

I've frozen herb butters before, I did a chive butter(for my jacket tats) and a chilli butter (for DH's jacket tats). I chopped them, mixed them up in softened butter and froze them in ice cube trays, then after they were frozen solid I transferred them to a bag and for the next few weeks when we had jacket potatoes I just got one out of the freezer and popped into the slit potato.
I've been meaning to make some more and some mint ones for new potatoes it was very easy and very handy to have ready.
Unfortunatly I've no idea how to freeze herbs without butter and would like to know how as well.0 -

Hope you don't mind me joining your discussion: what about basil - I have a pot on the window sill looking a bit tired - is it worth chopping up and freezing or should I dump it in the composter?0

I've never frozen basil (wouldn't think it would work very well), but what about putting it in a jamjar with some olive oil and making flavoured oil?0
