    It is well known in my family that if I phone Mum and ask her if she could get me a bottle of orange squash, a box of cornflakes and some milk that I am properly ill!

    I can quite happily live on that for a few days!

    Hi all

    I normally cook a big meal in the evening for me and my boyfriend but now he's decided that he'd prefer lighter meals for tea in the evening as he gets a big meal at work for lunch.

    I need some ideas from all you wonderful people for light evening meals...all I can come up with are sandwiches, salads and toasties!! :confused:

    How about Risotto's, Spanish Omelettes, things on toast ... or just cook smaller portions of what you normally do?

    Soup, Baked Potatoes, Small pasta dishes, boiled eggs on toast? Cheese on toast? OOh I am hungry now!

    Salads, could do a leafy salad or a pasta salad

    Mussels, sound posh but dead easy and cheap!

    Soup and crusty bread

    too many comps..not enough time!

    what about a wrap. make up a big batch of chilli and freeze in small portions. then get out a portion when needed and have it in a wrap with cheese.although there are loads of fillings which are just as nice.

    or twice baked jacket spud. if a really big pot he could have just half 1 night and half the other.

    make a small home made pizza. u could then make 2 about 6 inch and you could have your one with few chips.

    buy a pack of the part baked baguettes. they take about 10 mins to cook. and then could have bacon , or sausages in
