Marrow and beetroot

my borhters school has a veg plot. and they sell home grown produce fromt he garden in a tray for £2.50. it varys each week depending on what has grown etc and what they have.

anyway this week i got a huge ( i mean huge) marrow and 4 small beetroot in the box.

i always rememebr my mum cooking stuffed marrow. which kinda scares me a bit. as she used to fill it with some sort of vegetrain concocktion( sp?) she was a veggie for a while and went a bit ott on the type of meals she cooked.

and i've got 4 tiny beetroot.

what on earth do i do with them. with the marrow it has to be really nice or my hubby withh prob fear trying it. and he hates beetroot.i like it in a sandwich but only the pickle type.

    I'm landed with a giant marrow for dinner tonight too and haven't a clue what to do with it. I think I might stuff it with a bolognese type sauce. Anyway, I found this thread useful:

    Not too sure with marrow - Mum used to boil it, mash it and put it on my plate where it remained untouched:D

    But my friend loves to roast beetroot and serves it with horseradish sauce.

    Personally I hate both of these veggies, so can't go on what I like.

    Hope you enjoy them though

    welll i got the beetroot sorted. my mil came round and said oh beetroot we love that. so i gave it to her. lol

    as for marrow cheers for links i'll look in a bit. at the mo it reminds me of a baseball bat. so if all else fails then at least we can play baseball. lol ( don't worry i woulnd't really be that wasteful)

    Marrow is lovely with a roast dinner, imo anyway. I bung it in the microwave for about 6 mins then put it in the roasting tin with the meat for about 20 mins and it absorbs all the meat juices.

    Or as Pink-winged said you can stuff it, we like it with more of a cottage pie filling.

    with a roast some interesting.

    do i bung it in microwave whole ? i don't think it would fit ? and when roast it do i cut in half or something ?
  • I love marrow and feta soup - chop the marrow, cover with water & simmer til soft (doesn't take long). Add half pack of feta. Blend. Add fresh herbs if you like. Makes a lovely light & fresh tasting soup, which I like to think is low fat as well!

    That is a truly LOVELY cake. Honest :)

    In fact, I found that if you whizz the beetroot in the oil and vanilla you get a nice purply pink liquid which, when added to the dry ingredients, helps to make a very nice moist cake. (I also add the broken up chocolate here too - just for the last minute so it's nicely mixed in).

    I do mine in a pudding basin - eight and a half minutes in the microwave; and for the first time ever in my life I now look forward to the beetroot season! :D

    chocolate and beetroot cake sounds interesting i just not sure i could stomach it.

    if i was givena slice i'd prob eat it and think it gorgeous. but making and chocolate cake with beetroot in it just seems wrong. lol

    thanks for idea tho. i'm looking forward to experimenting with cooking it.

    It's what I thought too when I first saw it - but because I don't like beetroot I thought I'd give it a go.

    Now I make it on purpose and I still don't like beetroot!

    I know the beetroot has been given away, but thought I'd add this recipe we had on holiday in Greece and made at home last weekend.

    Romantic Beetroot Salad

    Chop up some cooked beetroot into cubes. Stir into plain yogurt along with some crushed garlic and chopped walnuts. Stir well and the yogurt goes all pink - hence the name.

    Absolutely yummy.
