Our local co-op is an organic nursery that runs the veg box scheme & they also have a little shop where they sell f&v and sundries so I have a suma catalogue book & I do a weekly order from them.

I don't fortify our homemade soymilk, but we take a powdered calcium supplement. I tried adding the powdered calcium to soya milk once, but it doesn't dissolve very well. I think you can purchase liquid calcium (maybe from a chemist?), but not sure how much it costs.

One more recipe - sorry to mix Imperial and metric but I'm still working on this!
Soak 6 oz soyal beans in 2 pints water for 12-24 hours. (In fridge in summer to prevent fermentation)
Strain off soaking water and measure it. Rinse beans. Replace strained off water with the same amount of fresh.
Blitz beans and water in liquidiser.
Pour into pan with 2 more pints of water, bring to the boil then simmer 15 minutes. Stir occasionally to prevent sticking.
Strain into a bowl through a cheesecloth or jcloth lined colander. When cooler gather up the cloth into a dolly bag shape and squeeze out thoroughly.
Stir in 1 dessertspoon of honey.
Makes 4 500ml potsful.
Can be frozen (don't worry, it goes brownish when frozen but retyurns to creamy colour when defrosted).
Give a little stir or shake before using.
The remaining ground soya can be spread over a baking tray and toasted for aprox 20 minutes on Regulo 4 - add to homemade granola recipes.
Alternatively the residue (called okara) can be used in any recipe for soya bean loaf or burgers - start from after beans are cooked and mashed.
It can be frozen if you don't want to use it straight away.0 -

May I ask where you purchase your soya beans?
I was
buying organic soya beans from a local healthfood shop, but I am lucky enough to live down the road from a group of people who have opene a radical social centre, and one night a week they sell organic goods at cost if you take your own containers, so my beans now cost 80p a kilo.
Obviously, this is useless unless you live in Cardiff, but most healthfood shops will sell them, and they do go a long way
(6oz beans makes 2 litres of soya milk and 8oz okara)

The cheapest soya milk which I have found is Tesco Value, which happens to be organic and calcium enriched
