sausage plait - where did I go wrong?

  • I think it might have been my recipe :confused: as it sounds familiar but even if it wasn't, I made up the stuffing as per the packet instructions plus half an apple chopped, a little extra onion and the end of a green pepper we had in the fridge plus salt and pepper and a pinch of chilli powder. Then I mixed the sausage meat into the stuffing mix and then put it on the pastry! I used about half a small packet of stuffing.

    I do a lovely one it beats most people! It is my challenge to hollow legged men! Puff pastry, sausagemeat, chopped onion, herbs,mix onion, sausagemeat and herbs together and make plait, ummm.
  • another tip is to place the plait on top of a wire rack so that the fat drips off rather than it soaking it all up. sausage meat can be quite fatty. rolling it ala sausage roll style is quite a good idea, i would have put slits across the top as well.
  • My recipe is really easy, one pack of sausage meat, combine with a small onion (finely chopped) and the special ingredient of lone large tablespoon of mango chutney, place in sausage shape on the puff pastry and plait, glaze with egg.

    My husband and children love it hot or cold.

    (I usually cook on baking parchment so it doesn't stick to tray)

    all these plaits sound delish. does anyone have please the pastry recipe that is used, as the pastry recipe i have has icing sugar in it, so it more of a sweet recipe.

    also do u buy sausage meat or just skin sausages ?

    Have to admit I buy ready made puff pastry for mine.

    Another variation of it that we tried was based on a Jamie O recipe for sausage rolls where he adds chopped dried apricots and sprinkles the top with poppy seeds after applying the egg/milk wash to the pastry.
    That was rather nice. :)

    I use 8 oz flour, 4 oz fat (usually Trex) and enough cold water to mix. There's a making pastry thread if you want to look at some other options; I use sausagemeat or sausages, whichever I have in the freezer ;)

    thanks for that rosieben (is trex lard or butter ) . i've got frozen sausages so do i just defrost them ? they are a bag of frozen ones i bought. not fresh that have been frozen if that makes sence.

    i'm thinking my hubby would love this for packed lunches as he loves sausage roll's.

    yes defrost the sausages first and take out of the skins if you prefer (I didnt but I used cooked sausages left from a previous meal) before mashing up and mixing with the prepared stuffing.

    trex is made from vegetable fat and looks like lard; its sold in a cardboard outer :) I got mine from sainsbugs but MrT also sells it

    my mum was in morrisons today and saw some of the 50p sausages so got some for me. and it got me thinking. i had some stuffing in cupboard and also so puff pastry mixes ( last year tesco got rid of them for i think 8p a pack and i bought loads, slowly working through them,lol)

    so i gonna make the plait. however we have dinner for tonihgt so have made sausage roll's. i made up the stuffing mix then when cool mixed it with the sausage meat. i've made about 20 sausgae roll's and still have loads of mixture left.

    do u think it will be safe in fridge for a couple of days ? the sausages had a date of them 4th sep. any ideas ?
