sausage plait - where did I go wrong?

Hi there
I saw an idea on here the other day where someone had made sausage plait & mixed the sausage meat with sage & onion stuffing & I thought oooh yummy
However I have just served this up to my children & snaffled a bit for myself & it was pretty rubbish - very dry & claggy, I am thinking that I should have perhaps added egg to the mixture? can anyone shed any light

Have not seen the original recipe but a good friend of mine mixes her sausage meat with a couple of finely chopped apples (but no stuffing) and that isn't dry0

i make this pretty regularly and it is a stodgy food. i find its more greasy than dry though and best cut into slices cold for lunch boxes. i think with adding the stuffing mix it might have been best to make the stuffing mix according to the packet and then mixed that with the sausage meat.Debt free 3 years early :j

did you use the stuffing mix dry or did you make it up as though you were making stuffing? i did some pork mince patties last week with stuffing in the mix and they fell apart big style, so i think i should have left the stuffing mix dehydrated.... perhaps the same thing is true for your plait?0

I just mixed the sausage meat & dry stuffing mix together until well combined & then popped it onto the pastry & plaited it

when i make sausage and stuffing plate pie i make up the stuffing mix according to the packets instructions, !!! some finely chopped onion and finely chopped apple if i have some and its lovely and moistWins: 2008: £606.10 2009: £806.24 2010: £713.47 2011: 328.320

I think you'd have been better to make up the stuffing as per the packet instructions and then mix it with the sausage meat.Val.0 -

Think it may have been my sausage plait you mean. I do mine similar to how raphanius does and its always moist. I make a moist mixture of the stuffing and then add to the sausage meat.

I did this the other day with leftovers - a couple of cooked sausages (chopped) some cooked stuffing and some mash. It was ok but a bit bland; I meant to include some left over bacon but forgot, and maybe extra onion next time I think
Just realised I didnt actually do a plaitI rolled out the pastry, spread the mix over it and rolled the pastry up like a swiss roll ...
scuttles off to look out a proper recipe for sausage plait ...... don't throw the string away. You always need string!
