Freezing cream of puffball soup

I've still got about 2kg of giant puffball left over, am going to make it into soup. Will a soup with milk in it freeze ok, or should I stick to water-based soup?

    I don't see why not. Alternativley you could make a water/stock based soup to freeze then add some cream when you reheat it.

    Is puffball nice? I've never manged to find any the haven't already been used as footballs.

    You need to find a Giant Puffball. They are about 1 foot or so wide, and will be found in fields. They are impossible to confuse with anything else, but they need to be white inside, because when they go yellow/brown they are going to spore and are no longer edible.

    Made some soup out of a pound of puffball, some fried bacon, sweet potato, potato, onion, garlic, a dash of chili sauce, milk, stock, but you could obviously make your own variation. When cooked, I liquidised it.

    I haven't had puff ball soup for years. I like it sliced and fried with onions as well. Wish I had some puff balls near me here(That use to be one of the joys of living on a farm) but even if they did start to grow the kids would kick them in within days. That use to be one of the joys of living on a farm.

    As for freezing soup with milk> I freeze milk on it's own and never have any problems and I have frozen soup with double cream in it and it worked fine. I also freeze left over mash pots and they always have milk in them.

    So I would think it would be fine

    I don't think you can dry them, though apparently frying then freezing works well.

    Made some puffball omelette, and some fried breadcrumbed puffball with garlic.

    Some other recipes I found:

    baked with cheese and tomato sauce

    Wow that looks amazing !!

    Did you get any pics of the puffball before you chopped and cooked it. I would love to see the full sized thing.

  • Loved puffballs until I read Puffball by Fay Weldon. Never managed to look at them the same afterwards, especially when I was expecting DD1...
