I don't know if this is going to help anyone, but we stumbled across it by accident and thought it might benefit a few others?
We had a mobile with 02 and the contract ended a while back. We since decided to go on a new deal and wanted to leave the original contract, which they generally ask for a notice of 30 days, hence another months payment.
However
My partner said to them on the phone, what if I want to go pay as you go? They said he could change his contract sim to a pay as you go. SO they sent him a replacement sim for 02 which was pay as you go, he doesn't use it, and has now got another contract which is much better value and didn't have to pay the extra months notice to O2!! :T
Anyway, this may help you, so we thought we would pass it on. It may work for other networks too!

It didn't work for Vodafone when I tried it last month. In fact they said I had to write them a letter to switch from a contract to PAYG.0

Its probably not the case while you are in contract.
I ended a vodafone contract fine in June by telephone - just asked them to move it to pay and go at end of contract date 31st July 2009 (this has happened confirmed by my final bill).
While you are in contract you have to give 30 days notice plus outstanding line rental if cancelling early.0 -
Hi Guys
You can see full details of the process to cancel a Vodafone contract here.
Thanks

Converting to PAYG after the end of a T-Mobile Contract also gets you out of your 30 days notice but you have to put £10 on the account. Still cheaper than a months line rental though.LBM : March 2008
