    Here's mine...

    Sunday - beef stir fry for OH, something on toast for me (felt poorly)
    Monday - fajitas for both of us with sour cream, salsa and grated cheese
    Tuesday - veggie lasagne and salad for me, HM chilli for OH
    Wednesday - not sure yet for OH, quorn shepherds pie and veg for me
    Thursday - chunky cod fillets, chips and peas for both of us
    Friday - tea at mums
  • havent meal planned in a while ( My bad! ) so we are going to be good this week...did a shop yesterday ( when I say shop I mean we raided the second freezer....loadsa yummies Id forgotten about! )

    Lunch; Bacon and Cheese Salad Wrap
    Dinner; HM Pasta Bake (no idea whats in it LOL) and Salad

    Tuesday
    Lunch; Manchego and Red Pepper Tart
    Dinner; Shepherd's Pie and Baked Beans

    Wednesday
    Lunch; Scotch Egg Pastie
    Dinner; OH - Something with Fish (yucky!) Me; Beans on Toast

    Thursday
    Lunch; Chicken Tikka Wrap
    Dinner; Sliced Lamb, Roasties, Veg and Gravy

    Friday
    Lunch; Pork and Leek sausage Roll
    Dinner; OH Fish Pie Me Tortellini in HM mushroom sauce with salad

    Saturday
    Lunch; Cheese salad bagette
    Dinner; Chicken and Chick Pea Curry

    Sunday
    Lunch; Lamb Salad Roll
    Dinner; Lasagne, Chips and Salad.

    Breakfasts; Bran Flakes, Toast, Yogurts, Weetabix, Porrige, Fruit
    Snacks/Puds; Yogurts, Angel Delight, Fruit, Jelly

    Sun: HM Low Fat Carrot & Pesto Lasagne, salad & leftover garlic naan bread - This was the first time I've made this recipe, but it was yummy, and even OH liked it despite it being vegetarian too.
    Mon: Jacket potatoes and salad
    Tue: Dinner at MIL's
    Wed: HM Veggie Sausage Casserole with rice
    Thur: Veggie nuggets, wedges and beans
    Fri: Veggie escalopes, veg and mash
    Sat: Dinner at M&D's
    Enjoy the little things, for one day you may look back and realize they were the big things.

    The manchego and red pepper tart sounds yummy - can you post the recipe, please? I've got some pastry in the freezer that needs using up!

    Dead easy

    Puff pasty, roll out, run knife around edge ( but dont cut all the way through ) put aside

    In a frying pan SLOWLY fy onions and red pepper until soft ( takes about 10-15 mins )

    Put a spoon full of the mixture on each pasty piece, place a slice of cheese on top, then top with a thin slice Chorizo ( optional, but very yummy ) and then add some more cheese

    Bake in oven till cheese has melted and pastry is cooked

    Haven't posted for a couple of weeks, been away...

    My organic veg gets delivered on a Wednesday and I get paid on a Thursday - so mine goes from Thurs - Wed. Looked for this post on Sat but totally missed it.

    Here goes for this week.

    Thurs: Chicken & Prawn Egg Fried Rice (using left over chicken from Wed)
    Fri: Buffet Food for me and Pizza for OH (Ann Summers party)
    Sat: White Fish with Cherry Tomatoes, Creme Fraiche & Pesto
    Sun: Eat at OH's parents
    Mon: HM chilli, wraps and salad
    Tues: Turkey Steaks with citrus & ginger sauce, rice and broccolli
    Wed: Roast Lamb with garlic & rosemary, roast pots and veg

    All home made from scratch.

  • this is a twelve day menu. have a budget of £150 but freaking out cos gotten slack food budgeting. the less i can spend the better.

    day one eggy bread or lentil soup. savoury rice baked tomatoes, garlic chicken/burgers.
    day two beefburger rolls. chicken casserole, veggie casserole, dumplings, mash.
    day three. soup and hot bread (those 45p wheatfield partbake rolls from tescos). macaroni cheese or couscous with roast veggies and sweet chilli sauce.
    day four.chicken sandwiches. chilli/bean chilli with rice.
    day five. chicken wraps, meatballs and sphaghetti.
    day six. frozen pizza and pudding- easy night.
    day seven.bacon/sausage rolls. potato and carrot curry with rice n nan bread.
    day eight. soup and hot bread. cauliflower cheese/sausage plait, new potatoes and carrots
    day nine. veggie shepherds pie/cowboy pie (mince based)
    day eleven. dhal curry and rice
    day twelve. pork chops potato bake (with some cheese on top for me). peas/sweetcorn.

    its a family of six, i am veggie, looking for more lunch ideas. not done a shop cost yet. those highlighted in red is what i have in the house already. do have various store cupboard essentials.

    Hiya! we have been meal planning for about 2 months now as trying to save for our wedding! very tempted by the veg box ideas! OH is always on about buying from local farms but not sure any of our local ones deliver!

    Anyhow, heres our meal plan for the week (up to friday as saturday is the beginning of our shopping week )

    Sunday - HM lasagne (freeze half of bolognaise mix for cottage pie!)
    Monday - fish n chips out of freezer
    Tuesday - cottage pie using left over bol mix
    wednesday - eating out 2 for 1 at pizza express for OH bday
    thursday - i eat on my own, jacket potato with cheese
    Friday - chicken, mash and any left over veg
    Current Mortgage balance - £363,785.35/£420,000 (highest point Oct 2022).

    That's brilliant - I've got some chorizo that I got cheap in Lidl and I've been wondering what to do with it (except eating it straight from the pack, which is my usual first choice! :o). Thanks very much - I'll be making some of these!
