    My meal plan for this week is based on the knowledge that I won't want to go near Mr T's! :rolleyes:

    Tonight: Egg on toast (if it aint broken, don't fix it! :p)

    Monday lunch: Chicken, bacon and broad bean slice (HM from the freezer) and salad
    Dinner: Quorn sausage casserole

    Tuesday lunch: Ham salad baguettes (full of hot sauce for Mr Maitane)
    Dinner: HM fish pie (again from my freezer) and mushy peas

    Wednesday lunch: Butternut squash soup & cheese sandwich
    Dinner: Chicken dinner! (From my freezer, just a few added roasties and stuffing)

    Thursday lunch: Cheesy lentil burgers
    Dinner: Cheese and ham pasta bake (I have cheeses that need using up) & veg

    Friday lunch: Leftover pasta bake & salad
    Dinner: Chinese chicken curry, fried rice. Spring rolls and dumplings. (All HM) Maybe a sneaky beer :beer:

    Saturday lunch: Wanton soup with leftovers from Friday dinner.
    Dinner: Smoked fish (from the freezer) dauphinois with salad, crusty bread and wine!

    Sunday dinner: Fish and chips (made at home)

    I'm rather excited about this week - It looks well nice on paper and I don't have much to do :j. I'm gunning for six NSD's and not having to go to the supermarket! Especially with having to sort out the new house. Have I mentioned I have a new house? :rotfl: Not sure if I have, hee hee.

    i stuck to last weeks plan almost, a slight alteration came into play today (sunday) because DH made a tomato sauce with some toms we had given us so i used leftover roast chicken and the sauce to make pasta bake and DS had the macaroni cheese because hes not keen on tomatoes unless they're in a pizza lol.

    monday - rubber chicken fajitas (using mission deli wraps bought with moc) and whoopsie salad
    tuesday - rubber chicken and sweetcorn pie made with whoopsie colemans mix (dated may 09), new potatoes and whoopsie green beans plus i will make chicken stock with the carcass
    wednesday - [STRIKE]jacket potatoes and salad[/STRIKE] leftover rubber chicken and sweetcorn pie, chips and beans DH had leftover rubber chicken fajitas for breakfast and lunch...will this chicken ever end? :eek:
    thursday - hm lasagne from freezer and salad
    friday - beef burgers and salad
    saturday - pork joint, stuffing, veg and new pots
    sunday - cold pork, salad and new pots

    I've been trying to think of this today, but really not in a foody mood at the moment, so it might change completely.

    Saturday - vegetable curry
    Sunday - vegetable curry pasties
    Monday - marrow bake
    Tuesday - marrow bake
    Wednesday - [STRIKE]fish cakes with potato wedges[/STRIKE] having stuffing and lentil burgers with salad instead as don't fancy fish cakes
    Thursday - [STRIKE]chicken, bacon and leek mixture with rice[/STRIKE] meeting my brother (and possibly sister) so may well eat somewhere else! If not, i'll have a jacket potato with something
    Friday - [STRIKE]lentil and stuffing burgers with salad[/STRIKE] chicken, bacon and leek mixture with rice
    Saturday - lasagne with garlic bread
    Sunday - lasagne again maybe or something else with mince depending on what I decide to make on Saturday

    Just back from a spontaneous few days out in the camper van - managed to stick to the mealplan mostly but not entirely, so a few repeats from last week. Also have found on my return that there are some serious gluts in the garden..... I won't need to buy any veg for a while!

    Today - pasta with green beans and mangetout in lime-peanut sauce. Tomato & basil salad
    Monday - salade nicoise
    Tuesday - beetroot soup, crumble chèvre-courgette
    Wednesday - roast chicken on barbecue, HM wedges, mixed veg salad
    Thursday - chorizo/chickpea stew with brown rice
    Friday - minestrone soup, beetroot/potato salad with walnuts and blue cheese
    Saturday - thai style curry made with many vegetables (and either leftover chicken or pork fillet), finished off with chard.
    Sunday - pasta with courgette sauce

    Heres mine

    Sunday - roast chicken, roast pots, HG beans, HG carrots, gravy, (parent is bringing dessert)

    Monday - rubber chicken curry ( not as much chicken this week as there were 4 of us yesterday for lunch) using leftover chicken, reduced jar curry sauce from B&M, Rice from asian supermarket, onions - bought in bulk on sat in market and dodgy pepper from fridge

    Tues - French onion soup with cheese on toast - bread whoops on saturday, onions from market - Mary Berry recipe.

    Wed - Fish from freezer with HM chips and frozen peas

    Thurs - Sausage casserole - using up old packet mix - pre OS days and HG carrots, HG potatoes and onions from Saturday's bulk buy

    Friday - finish sausage casserole as filling for baked potatoes, with some of cheese from Tuesday. HM pear crumble - made from stewed wild pears - picked in Churchyard today.

    Saturday - HM pizza using pizza base mix( I know - still learning to cook) HG tomatoes, rest of cheese, mushrooms, peppers, chorizo from freezer - bought on whoops.

    People more OS than me asking for recipes? :cool: It's like my proudest MSE moment so far... I should have prepared a speech.

    Anyhoos.. Chicken, bacon and broad bean slice.
    1. Make your pastry, I added salt, pepper and mixed herbs to mine.
    2. Take some celery, onion and bacon bits (and whatever else is lying around) and fry them off.
    3. Add in your leftover chicken and broad beans, add a dash of stock and if you're feeling posh, a dash of white wine. Then some quark (I had it to use up from my butternut squash soup), some seasoning and leave it to cool.
    4. Make up your pasties (I put two of my four in the freezer), bake them, slap away OH then scram with sweet chilli sauce at your desk at work. Much to everyone at works jealousy... :rotfl:
    Cheesy lentil burgers

    I haven't made these yet but y'know, I'll be making them in advance so I'll tell you how it goes. I'm hoping enough cheese will make Mr Maitane eat them!
    1. Cook however many lentils in water at a ratio of 1(lentils):2 and a half (water) until they are soft and cooked.
    2. Fry off onions, carrot, whatever else you fancy chucking in, garlic and seasoning. (I'm adding half a tonne of chilli at this point)
    3. Put it all in a bowl with half as much grated cheese as you had lentils, the same quantity of oats, the same again of breadcrumbs and one egg.
    4. Form into burgers and either flour or breadcrumb, whatever you fancy.
    5. Fry or bake, add cheese, a roll with some salad and in Mr Maitane's case, a load of hot sauce.
    Thank you for the positive comment regarding my meal plan, I was feeling pretty smug with myself.. hee hee.
    Also, I think I've mentioned before on the Economy Gastronomy thread that I used to work in kitchens for a good decade so I pride myself on being able to make something out of any ingredients and I also used to work in a well thought of Indian restaurant so anyone who likes curry (and wants a low fat version of anything), just PM me and I'll see what I can remember. :D

  • Thought I'd join in. We've had to plan 3 weeks in advance :eek: to make sure we use everything up in the freezer before we go on holiday, so that we don't waste anything. This weeks meal plan is:

    Sun: gammon, mash, brocolli, spring greens and califlower
    Mon: LO chicken, chips and beans
    Tues: Beef Casserole and mash
    Wed: Sausage, egg and chips
    Thurs: Mince and pasta sauce in a baked potato
    Fri: Fish and chips
    Sat: Cottage pie and beans
