I like littleredhen's idea of roasting everything together - that way the veggies will take on some of the flavour of the sauce (and it will be nice and easy, and save on the washing up
). Something cabbage-y - savoy cabbage or kale or similar would probably nice, too, either instead of the roast veggies or as well.

Yes - that does sound nice. So how long should I pan fry the breast for before popping into the oven with veg?
Also, what about potatoes?

i would pan fry them for about 10 mins if you can't turn them over cos of topping or 5 mins each side then cook them in the oven for about another 20 - just keep checking them so they don't over cook but make sure that you have cooked the chicken right through
personally i think either mash potatoes or boiled but you could do roastThe mind is like a parachute. It doesn’t work unless it’s open.:o

I would normally do Chicken Supreme with rice, but looks like you're sorted for veg already.
I would just flash fry the chicken in the pan then into a medium oven, you don't want to over cook it.
How about boiled potatoes/new potatoes drizzled with a little garlic butter? You could always gently crush them if you liked?

mmmmmmmmmmm that sounds very much like the chicken my local butchers used to sell as 'garlic and herb' chicken. but i dont recognise the orangey colour? does it smell a bit curry like? the ones i am thinking of just had a green coating - the orangey ones were tikka chicken.
whatever - I would play safe and serve with potato wedges and a nice green salad! maybe a nice garlic and herb mayonnaise as well,0 -
If you steam the rice rather than boil it is much tastier, is not sticky and easier to co-ordinate with the main meal as it can stay with a teatowel on for a while!

I'd have something very simple to go with it. Probably boiled new potatoes with parsley butter and some carrots. Nothing oily if you're having a creamy sauce with the chicken.0
