The Taff Trail is a multi-purpose route between the Cardiff waterfront at Cardiff Bay in the South and the Market Town of Brecon in the North. 55 miles (88km) in length, it passes close to Pontypridd and Merthyr Tydfil and through a wide variety of urban and suburban landscapes of those towns and the open moorland of the Brecon Beacons

Don't know if it's too West for you but the coastal route in Llanelli is a purpose built cycle/walkway along the coast and leads into Pembrey Country Park if you want rougher terrain.
Loads of places tp park but the official visitor centre and the park will charge you, so be a true mse'r and park a bit further at whatever point is easier to join eg some laybys about or residential areas.:j

I'd second the Llanelli one. And there are a few in Swansea too - seafront, marine to swansea valleys, and there are many routes round gowr too.

The Taff trail is great - we used to to park in Tesco Western Avenue and either cycle into Cardiff Castle or up to Castell Coch.
I know as a child we did some lovely routes around Swansea - the Gower.
Once my daughter is able to ride a bike this is something I can't wait to get into, so I'm going to keep an eye on these messages!0 -

If they are young, is there a better, safer bike ride than Swansea to Mumbles along the sea front ? either it's entire length or just part of it. There's always an ice cream waiting at the end and the view's not bad either.0

Nice Canal trail running down from Crosskeys to Newport (fourteen locks) - one way about 6 miles (I usually do both ways) - Sustrans trail number 47
Sirhowy country park itself has a nice trail up and down the valley.
Bridgend has a few trails around Tondu.
all these above are off road0
