Quality set of kitchen knives

Hi

Some time ago I asked if anyone had any recommendation for a quality frying pan. Someone recommended a Anolon which I bought. I'm really pleased with it and it confirmed that it is worth spending a bit more for quality.

Could anyone recommend a good set of knives? I can't seem to get mine good and sharp - I'm using Tescos stainless steel ones at the moment. I want to be able to portion a chicken cleanly like they do on the telly! Perhaps I just need a good sharpener?

Many thanks

I went for some Stellar Sabatier and have been very pleased with them. Bare in mind 'Sabatier' is a name many brands use and lots are rubbish - my mum had some from TK Max that had 'Sabatier' on but were not good. Have been very pleased with the Stellar knives.

I use Anolon pans too so must be a perfect match ;)

Many thanks Shimmyhill. That's interesting re the use of the Sabatier name. Can you tell me where you bought your knives from? Can you buy them online?

Probably the best knives you can get are made by Henckels. If you are looking out for Sabatier knives, make sure you get Taylors Eye Witness or Stellar brands...

Global knives are fantastic, but very expensive.
Don't buy off Ebay, there are loads of fake ones on there.

I bought mine in a Cooks shop, my mum got some online and cheaper too - will check with her what site it was from !

Global and Henckels are indeed fantastic but vastly more expensive, i did try some but had to go a little cheaper and found the Stellar knives to be very good for the money.

Im another fan of Henckels knives.

There is a good guide to buying knives in the link below.

If you can, why not go to a shop and see how the knife feels in your hand, is it comfortable and well balanced.

If buying online beware of places like ebay as there are a lot of counterfeits of the like of Global and Henckels on there, if something is really cheap its most probably fake, saying that not sure if you can buy knives on ebay anymore anyway!

Oh and get a decent knife sharpener, I have a Henckels sharpener and it keeps the knives in top shape.

I wouln't buy a set of knives - go to a shop, try what feels right for you - I love gobal knives but they just don't feel right in my hand so use stellar for my all purpose chopping knife, I have a henkles parer and a cheap as chips serrated knife.

I was given one of those Anolon knife sharpeners that have ceramic wheels you pull the knife through, (and put water in to keep it cool). Three different bits depending on how blunt your knives are.
It's great and really easy to use - I couldn't get on with the steels at all. My knives are sabatier, I think one of the cheaper ones, but I hacked a chicken to bits the other day without too much effort.
