You can use large courgettes like marrows; marrow mornay (lightly blanched marrow (cubed & without seeds) in a cheese sauce, which is finally grilled to provide a browned top) is delicious and freezes well.
One family favourite with us is to halve the marrow lengthways, scoop out the seeds, fill with chilli con carne (tinned or home produced), top with cheese and bake in the oven. Serve with green beans or a side salad.
Although many soup recipes are dismissive of cougettes, if you cook them in a good vegetable or chicked stock (cubes, I hasten to add) and add a few herbs plus a potato for thickening, you can enjoy a very low calorie, good quality soup for minimum cost.

Courgette and Basil Soup
Chop onion and basil and fry until soft. Add a chopped potato and courgettes. Cover with stock, bring to the boil and simmer until veg are soft. Blend, and season to taste.
I think the recipe originally came from one of the Covent Garden cookbooks. If you want exact quantities I'll try to find it for you.
This sounds great, would appreciate if you could get me the quantities as i have another 4 Courgettes waiting to get picked. From the one plant i have 18+ so far with a lot more still to come by the looks of things0 -

If you have large courgettes try hollowing them out and make fritters with the insides and then stuff with rice and minced lamb,spices and bake in the oven...On another note my plants are still making new courgettes and leafs can i cut away the old leafs or should i leave them.0

I slice them and roast in the oven with peppers, onion, toms, olive oil and garlic and herbs, then use in a eg a roast veg lasagne or eat with chicken and rice
And there's a nice sounding recipe on the OS board that I haven't tried yet:
courgette pie (nmsmum)
Be sure to use basmati rice as it gives a wonderful flavor. Emmenthal/gruyere will work much better than cheddar.
800g courgette, coarsely grated
3 onions, chopped
1TB olive oil
1/2 cup basmati rice (my aunt just throws in a small handful - I'm guessing this is about 1/2c)
3 eggs, beaten
1/3 cup grated emmenthal or gruyere (again aunt just chucks in a handful)
9in unbaked pastry crust
Fry the courgette and onions in the oil over gentle heat until the courgettes are no longer watery.
Remove from the heat.
Stir in the basmati rice and allow to cool.
Stir in the eggs and emmenthal/gruyere.
Pour mixture into a 9in unbaked pastry crust.
Bake at 200C for 30min.
Wonderful when eaten either warm or cold.Just call me Nodwah the thread killer0 -
