different legs with different airlines

If it is cheaper to do so, is there any good reason for not splitting a return flight between different airlines - e.g. booking an outward flight on ryanair and the return flight with easyjet?

No reason not to. Even if you booked both flights with the same airline, the outward and return flights are completely separate and are not treated as a return ticket. What goes around - comes around0

No, booked recently the outbound flight with easyJet LGW-BSL and the return with Ryanair BSL-STN.Posts are not advice and must not be relied upon.0

I recently took advantage for once of a Ryanair cheap flight to Krakow, £5 one way no taxes but the returns were quite expensive, so booked one way then logged onto the Polish Ryanair site and booked returns thru that and paid in Zlotys and even with the exchange rate it worked out a lot cheaper than the UK site0

If you're booking well in advance with the low coast airlines, it can SOMETIMES be an advantage to wait before booking one of the flights. They often don't put usable return dates on offer at the same time as outward flights. ie. next day or 7 days later or the Sunday after a Friday will often be really expensive. A few weeks later it's
the other way around.0
