    I think it only keeps a couple of days once cooked.
    I made a delicious crumble this week, rhubarb and BANANA(it cuts the acidity)and has a lovely flavour, you wouldnt really know te banana was there, but the flavour and texture is just a bit more scrummy. The topping was hte usual flour/sugar/marg mix but had added coconut.
    Served wuth ice cream, oooh! I want some now!

    Rhubarb freezes really well, try freezing in portion sizes and just get one out whenever you need it.

    Freeze it in an ice cube tray and then plonk one out into a bowl and stick it in the microwave when you need one, won't take a minute to defrost.

    Love rhubarb, frequently cook it with ginger...never lasts long enough to be able to answer your question, does freezer really well, raw or cooked...might go and get myself some to stew before it gets dark, thanks for idea

    MMM rhubarb and ginger-is that fresh, powdered or that stem stuff in syrup? I have both the former but not the latter-however if its the best thing, I may have to get some :D

    Just got a load of rhubarb from the allotment and will be making a rhubarb crumble. However I have loads left over.

    My question is when you say freeze it, can I just wash and cut into pieces, then freeze or do I have to stew it first?

    Also how long will it last in the freezer?

    I usually cook it before freezing but I have just washed it, bagged it up and popped it into the freezer in the past and it was fine.

    Hi, i made rhubarb jam one year,just used the jam sugar, it turned out well.
    You could add fresh ginger to that to make rhubarb and ginger jam if liked.

    I've already cropped 5 kg of rhubarb, so far Ive made rhubard jam with orange, and rhubarb relish in one day. Had to throw the rest in the freezer as I just cant process that much rhubarb at once! Rhubarb jam with ginger next, then I don't know what next. Rhubarb jam is perfect for breakfact with yoghurt and more convenient than haveing to defrost some everyday IMO. Just make sure you use sugar with added pectin.
