MealPlans WB 20 July 2009

Good afternoon :D It's early I know but I've done a months worth of lunch & dinner meal plans today in an effort to get organised for the summer holidays. All four of my children will be off school/college by Monday  so I'm trying to come up with interesting, reasonably healthy, not too expensive & filling for the boys plans so here's hoping ;)

Monday - Lunch: French Toast & Chopped Nectarines (Aldi's Super 6)
Dinner: HM Pasties, HM Wedges & Beans

Tuesday - Lunch: Leftover Wedges, Beans & Poached Egg
Dinner: Chicken Sweet & Sour with Pea & Onion Rice

Wednesday - Lunch: Sandwich, Salad & Yoghurt
Dinner: HM Chicken Kebabs marinated in BBQ sauce, New
Potatoes & Salad

Thursday - Lunch: HM Soup & Tortilla Wraps with Ham, Grated Carrot &
Salad
Dinner: HM Chicken Curry, Rice & HM Flatbreads

Friday - Lunch: Pitta Pizza's with Salad
Dinner: Sausage Pasta with hidden peppers & courgettes in ;)

Saturday - Lunch: Beans on Toast
Dinner: Spaghetti Bolognese, Salad & Garlic Bread

Sunday - Lunch: HM Pancakes
Dinner: Roast Lemon & Herby Chicken, New Pots & Salad

Snacks are fruit (I fully intend to take full advantage of Aldi's Super Six), cheese & crackers, pate & crackers/toast, HM dips with veggie sticks and the occassional packet of crisps  I'll also make a big batch of Twinks hobnobs and a couple of victoria sandwich cakes.

It's the first time that I've planned lunches so I'm hoping that it's a success & that it'll stop me making 5 different sandwiches

What is everyone else having this week?

Not sure it counts as a recipe ;) but this is what I do:

I simmer together plenty of chopped celery (about half a head), 1 large or 2 small chopped onion/s, 1.2 litres of chicken stock (I use only 2 cubes) and 1 slice of bread torn into crumbs for about 15 minutes. I whiz til smooth and add white pepper and salt to taste. We like it drizzled with some extra virgin olive oil. Hope you like it too :)

    Early is good! :D

Did really well with last weeks (this week) only had to switch two days around, but all meals stayed as they were......so proud! For next week:

Sun- HM Lasagna / HM Garlic Bread / HM Garden Salad (from our troughs)

Mon- HM Bacon Wrapped Baked Cod w/Rosemary / Broccoli, Peas and Corn
Tue- HM Cheeseburgers w/salad toppings / Chips
Wed- BH Day Off - Probably Sun. Leftovers
Thu- Pork Chops / Mashed Potatoes w/Gravy / Corn and Parsnips
Fri- HM Baked BBQ Chicken / Carrots and Green Beans / Egg Fried Rice
Sat- Jumbo Hot Dogs / Beer Battered Onion Rings

Trying to do less and less of packaged foods, thus keeping track of the HM's ;) Other plans are to make a Peanut Butter Layer Cake and to make up a batch of HM beef burgers to go into the freezer. :-)

  • Sticking to the meal plan this week has been easy, although I have had to change days round a bit and skipped one day because DH wanted to go out for a meal to celebrate the new job, his treat so not out of my budget :) Bit nervous about next weeks menu I've planned for cool days menus because of the forecast rain, which may go to pooh if it goes all hot and sunny again, but I guess I can adapt.
Boodle can you post the recipe for the summer peach pudding it sounds yummy?
Sunnygirl I hadn't thought of making wraps for lunches, so thanks for that :T it would ring the changes, I do make different breads in the breadmaker but wraps would be something different and adding grated carrot will help pad them out methinks, and make them healthier, will have to look on here for peoples favourite wrap fillings.
