    I think you can use either but the 'classic' victoria sponge has icing sugar dusted on top.

    According to WI schedules for their comps its caster - icing sugar would be disqualified. Does the show have a schedule for each class for you to check?

    A quick google for their recipe suggests it's caster sugar but i would have thought it was icing as it looks like that in the picture ?

    Tanith, it IS OTT isn't it?!! :) Many thanks for reading my blog though - it's all in the name of baking...
    You'd be disqualified for adding cream OR icing sugar from WI competition... even if Paul Hollywood says otherwise!

    PS - I worked for Greggs - they can't bake... :p:p
