  • There is of course coffee with evap. Or cereal with it.

    Then some people spread condensed milk on toast or eat it as it is on ice cream.

  • Coconut ice cream will use up both evaporated and condensed milk (and is really yummy)

    400ml evaporated milk
    400ml condensed milk
    400ml coconut milk
    5ml almond extract
    small amount of grated nutmeg (optional)
    shredded coconut (for decoration)

    Mix together the three different milk types in a large freezerproof bowl and stir in the nutmeg and almond essence.

    Chill in a freezer for an 2 hours. Remove from freezer and whisk the mixture with an electric whisk until it is fluffy.

    Pour into a freezer container, then cover and freeze.

    To serve decorate with shredded coconut.


    really easy and very effective. Is also fab with hot fudge sauce (also made with evaporated milk)

    350ml evaporated milk
    350g chocolate (cadbury buttons or just a bar chopped up)
    100g sugar
    Tablespoon butter
    teaspoon of vanilla extract

    Basically you put the sugar, milk and chocolate in a pan and melt gently then bring to boil. Take off the heat, stir in butter and vanilla and then leave to cool and thicken.

    Get hold of the Hummingbird Bakery cookbook (the first one) and make the lemon meringue pie. It uses condensed milk in the lemon filling and is by far the nicest lemon meringue I've ever tasted.

    Or you could do a chocolate tart (possibly with hazelnuts). Or a key lime pie. Or a treacle tart. Or a tarte au citron. The possibilities are absolutely endless :D

    I want to make some of Delia's quick flaky pastry. Her recipe says plain flour, but I have used up all of mine, experimenting with my new bread maker. Can anyone tell me if it would work with self raising please? Thanks

    would it work? i have two tins in my cupboard and noone will eat them so wondered if i disguised them into cakes then they would disappear. would i need to use less sugar if so?

    i don't see why it wouldn't work but personaly i'd eat them in warm custard :)

    was hoping to make something that could go into ds' lunchbox. plus he doesnt really eat custardy puddings. thanks though

    would be eat apple sponge? just do a normal sponge mix and wizz up your apples and add them to the mix, i have done this before with pureed apples so i'm sure it would work with tinned
