Hi all. A few times recently I have taken a cake from the oven to find that it has gone as thin as a biscuit on one side and is big and risen on the other. Happened with a couple of different recipes that are usually fail- safe and have worked for me for years. It's as if I had tilted the whole tin so that it baked at an angle.
I'm going to a friend's for lunch today and need to bake now before the school run so I have something to bring so please help! I'm usually an okay baker.

My baking powder has gone lumpy, could that be relevant? I have been seiving it but wonder if it isn't effective any more.

Anyone? I haven't baked yet as I don't want another disastrous cake but really don't want to have to buy one either.

  • I always sieve my baking powder,as it usually is a bit lumpy.I sieve it with the flour though, three times.I don't think that it's that, except if you think it's lumpy because it's damp.

Sorry I can't help you otherwise.

Are you sure that the oven is at the right temperature?

Thanks for your reply. Oven definitely at the right temp, and I seive the baking powder. I do think it did get damp as it's in big hard lumps. I've never had one as bad before and it's not anywhere its bbe date. I really need to get on and bake so maybe if I make some baking powder from cream of tartar and bicarb and see if it maybe was the baking powder.

Actually, just thinking back to the last one that didn't work. Can't be the baking powder as I made a chocolate sandwich cake. 9" tins and the first one rose perfectly in a metal tin. Second one was made with the same mix but sat for an hour waiting its turn in the oven and I did it in a silicone mould. Maybe because I didn't bake it right away? I have done the same thing many times though with this particular cake and never had a problem.

  • I don't think that it's good for the cake, not to put it in the oven pretty soon after it's in the cake tin.

I've never baked with silicone,so don't know about that.

I have found this, which might help.

After all that I went to start baking and realised I had run out of sugar! Ah well. Maybe I can make an unwonky cake next time.
